copper bottom pots are the best and also the most expensive. stainless stell are a good compromise. creuset pots and pans are the very best in my opinion.

Pans having copper or aluminum bottoms conduct heat fastest and most evenly. Remember non-stick interiors don't last forever even with the greatest care, (no metal utensils) no matter what guarantee they claim, even on HSN and QVC! A warped pan or pot is almost useless on a flat cooking surface like an AGA cooker or smooth top range, heat is wasted and cooking is uneven. Never place a hot pan in cold water. I have never cooked using porcelain enamal cast iron (LeCreuset). They need care not to be chipped during handling. Cookware will last and look great as long as not too high a heat is used, not handled rough(no sudden temperature changes and not banged about on the stove or sink) and promptly cleaned after use.

Le Creuset, they are cast Iron not cheap but will last a lifetime or 2, we inherited a set of cast iron pans and they are excellent, they also do a stainless steel range.

They have a lifetime Guarantee as well.

You can use Le Creuset cast iron on whatever heat source you choose - Induction, halogen, ceramic, gas, electric ring and solid plate, and solid fuel (e.g. Aga, Rayburn).

Stainless steel pans with a thick base. I use different pans for different recipes.

you need copper base pans. they are expensive but a good set of pans will last you a life time.

buy a really heavy stainless steel pan that is restaurant quality and you can use it on anything for anything.
