I cooked it a really long time and it's started to flake, but it's still pink on the inside!

It was in the slow cooker on HIGH for over 4 hours, and also on low for over 4 hours.

The texture looks like it's not only done but well done - perhaps just the outside got cooked?

Veal is going to be pink on the inside. It is young beef. Enjoy.

Hiya IQ!

Yes, Veal when cooked can look pink on the inside. In 8 hours of cooking, any meat would be done no matter what it looks like. But the veal you cooked should me fork tender by now, the melt in your mouth kind of tender. Taste a small sample, then your see it's done. Good luck!

Was it pink on the outside because of the sauce? There is no reason uncooked chicken would be pink on the outside, but fine on the inside. Chicken should never be served pink on the inside. If you get that in a restaurant, you need to politely send it back.
