Can you store cornbread batter overnight before baking it?

I was going to follow Albers Cornbread recipe, but I wanted to mix the batter the night before I was going to make it. Will it effect the outcome of the cornbread?

My recommendation is to mix the dry ingredients (flour, corn meal, salt/sugar, baking powder/soda) the night before and add the liquid ingredients (eggs, oil, milk... etc) right before you bake. The mixing step should only take 5 minutes and can be done while the oven is pre-heating.



Why?

The leaveners baking powder (or soda) react with the liquids. If you hold the batter overnight, the leaveners will be spent by the time you bake the corn bread.

If you store it air tight in the fridge, the only thing that will happen is it will get cold. When I worked for my cousin's catfish buffet we stored hush puppy mix for days in the walk in cooler. It was always fine. Just make sure you cover it with a lid or plastic wrap and let it get room temperature before cooking, otherwise it will take a little longer to cook if the mix is cold.
