i would like to try and make my own fried rice using a wok and havnt really got a clue any ideas what the best oil to use and the best rice?
and the method would help thanks .

Fried Rice

Fried rice is the perfect use for leftover rice. The fluffy, slightly dry texture of fried rice practically depends on your using day-old — or at least not-straight-from-the-stove-or-steamer — rice. When you stir-fry freshly cooked rice, you end up with a wet, clumpy dish.



-Preparation time: 15 minutes

-Cooking time: 8 minutes

-Yield: 4 servings

Ingredients



*3 tablespoons cooking oil

*2 eggs

*1/4 teaspoon salt

*1/8 teaspoon white pepper

*3 cups cold, cooked long-grain rice, fluffed

*3/4 cup char siu, diced (or substitute with cooked chicken or shrimp)

*3/4 cup frozen peas and carrots, thawed

*1 1/2 tablespoons soy sauce

*4 green onions



1.Crack and lightly beat the eggs in a small bowl.

2.Place a wok over high heat until hot.

3.Add 2 tablespoons oil, swirling to coat the sides.

4.Add the eggs, salt, and white pepper; cook until lightly scrambled.

5.Use a spatula to move the eggs to the side.

6.Add the remaining 1 tablespoon oil.

7.Add the rice; stir for 2 minutes.

8.Add 3/4 cup char siu, and peas and carrots to the wok.

9.Stir to mix well.

10.Thinly slice the green onions.

11.Add the soy sauce and green onions to the wok.

12.Stir-fry for 1 minute and serve.

Serves 4 to 6



This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3.

Chahan Rice (japanese rice)

Ingredients



* 400 g white rice

* 1 egg

* 2-4 long green onions

* 40 g bacon

* 30 g carrots

* 1 tablespoon soy sauce

* 1 tablespoon sake

* salt

* pepper

* olive oil

Directions

Chop the onions into small cube pieces. Dice the chashaorou/bacon and carrots

Fry the harder stuff first (onions, carrots, etc.)

Heat the frying pan, pour in the olive oil.

Then put the raw egg into the pan with the olive oil.

Before the egg becomes cooked, put in the warm rice, have the stovetop at medium heat.

Mix and cook/fry the rice and egg together (in a wok is best).

Add the long green onion, chashaorou/bacon, carrots and if you would like to - green peas as well.

Add 1 tbsp soy sauce and mix it up.

Add 1 tbsp of sake and salt and pepper to taste.

Mix it up a little more and it's ready to eat!

Its just eggs and rice fried in the pan!! Heres a good recipe but you can take out some ingredients to suit your taste buds!! For the best results, refrigerate the rice for several hours beforehand to keep it from turning mushy when you make the finished dish. RECIPE INGREDIENTS: 2 1/2 tablespoons vegetable oil 1/2 teaspoon sesame oil 4 scallions, sliced 1 cup frozen baby peas, thawed 1 medium carrot, peeled and grated 3 cups cooked and chilled long grain white rice 3 large eggs 1 1/2 to 2 tablespoons soy sauce 1. Heat 2 tablespoons of the vegetable oil and the sesame oil in a large sauté pan or wok over medium heat. Add the scallions, peas, and grated carrot all at once, taking care to avoid being splattered by hot oil. Sauté the vegetables for 1 minute, stirring them constantly. Add the rice and stir the mixture occasionally as it heats for 2 to 3 minutes. 2. Have your child break the eggs into a small bowl and beat them with a fork or small whisk until blended. Then she should move the rice to the perimeter of the pan and pour the remaining 1/2 tablespoon of vegetable oil into the center. Add the eggs and stir them continuously with a wooden spoon until they are soft but not overcooked. 3. When the eggs are almost fully cooked, stir the rice into them until everything is well mixed. The key to good fried rice is, of course, the rice. You can really use any kind of rice, but the best advice is to cook the rice the day before. I usually make fried rice when I have leftover white rice from another recipe. I usually use olive oil just because it's something I always have on hand (not very asian though), but again, you can really use any kind of oil, it's a matter of preference. Then you add little bits of whatever YOU like that makes fried rice yummy! Chicken, shrimp, peas, carrots, and of course, eggs!

yes but unlike the others ~

i fry the rice

for 4 servings

use 2 cups of rice

into the wok put one table spoon of olive oil or veg oil

heat till it is hot

put the dried rice (not cooked ) into the oil

it will swell up slightly and go very white(you will see when you do it)

fry for about 5 minutes ~keep stirring or it will burn

take off the heat

i then add

a 1" cube of fresh root ginger (diced or grated) to the rice

¼ of a grated nutmeg (not the dry powder)

½ a tea spoon of cinnamon

1 medium diced onion

mix well leave for 5 min's

put back on heat get it hot again

keep stirring and add 5 cups of boiling water

bring water to boil

take off the heat ~it will finish cooking

prepare any veg ~i use carrots ~parsnip~celery~red peppers (sweet)

mushrooms in season~slice the harder items thinly

check the rice ~it should be still a little firm

put back on heat and cook veg in rice for 5~10 minutes

i like my veg "crisp" so 5 mins for me

you can serve with a meat of your choice or i some times have it cold as a "salad type meal"

well that's how i cook fried rice

enjoy any way you want to cook it

i make this really delicious rice with tomato sauce and basil

first, i fry the rice (evoo). by the way, i also throw in some minced garlic.

after 10 mins or so, i throw in a small can of tomato sauce and stir it around for about 4 mins. by the way, i'm constantly stirring the rice. no breaks! also, i make about a bowl's worth for a small can of sauce.

once the rice is fried, i add 3 bowls of water(3 parts).

then, i put in half of an onion.

then i put about two tblsps. of chicken soup powder, or one tblspn of chicken soup powder and one tblspn of seasoned salt.

then, i add a can of corn. i keep stirring.

then i add a bunch of basil. my rice comes out sweet, so i probably put too much for other people's taste, but i've never had complaints.

*by the way, i don't know when you can stop stirring the rice because i stay there stirring the whole time.

any questions?

i came up with this rice on my own, and i think it's a good general taste. i've made it as a side dish for some jumbo shrimp 'n' veggies, and the whole thing was good!

White rice. Cook it the day before and put in fridge.



Soy Sauce

Ginger paste from a tube or minced fresh ginger.

Green onion chopped

Bok Choy chopped finely

Ham, chicken, Shrimp or any leftover meat.

Eggs.



Peanut oil for frying.



Fry the rice a little veggies for one minute add the rice and other ingridients. Stir fry it on Med. high heat. stirring constantly. Add the beaten eggs just prior to completion of the stir fry time.



Serve immediatley,

for 2 people I use one bag basmati rice...boiled While it is boiling I chop a clove of garlic and an onion, whisk 2 eggs and mix them together. Fry for about 1 min then pour the rice into the mixture and stir well. To finish I pour a small drop of soya sauce into the wok to moisten.

fast.. easy..yummy..the best ever!!

well, the asians use peanut oil, which is very bad for you. When I make it, I use brown rice and fry it in olive or grape seed oil (health nut you know). Then, I add small pieces of vegetables like onions, carrots, peas (very finely chopped) and leftover meat or chopped bacon and a scrambled egg. I then add Teyeraki sauce (sp?) and ginger and stir fry it.

I think it's good, but I've had mixed reviews. It's a love it or hate it reaction.

I do all the time, mine is Thai inspired, i use Jasmine Rice for this



FRIED RICE

6 cups Rice, cooked, chilled over night

1 med Onion, chopped

1 med Green pepper, chopped

1 cup Meat or seafood, your choice, cut into cubes

1 cup Pea pods, cut in half

1 cup Bean sprouts

Sweet soy sauce (found in Asian markets)

Fish sauce (found in most grocery stores)

2 cloves Garlic, minced

3 Tbsp Oil

1 Tbsp Ginger, fresh, chopped (optional)

2 - 3 Eggs, beaten

1. Heat oil in wok over medium heat

2. Add garlic (and ginger if using), stir, quickly add meat/seafood and stir fry until it mostly done

3. Add onion, green pepper and pea pods, stir fry until cooked but crisp

4. Push food up on sides of wok, pour in eggs, scramble until cooked

5. Add rice, mixing in well

6. Pour enough sweet soy sauce over all circling wok twice

7. Do the same with the fish sauce

8. Taste and adjust the sauces as desired

9. Stir to heat rice

10. Add in bean sprouts, mix

11. Serve hot

Feel free to add in any other vegetables you desire. You can also add in fresh chopped cilantro with bean sprouts as well as chopped scallions.
