You can add any flavoring to a cake. If you don't have vanilla extract or vanilla flavoring, you might want to add a fruit flavoring such as orange or lemon. If you don't have those extracts, but you have orange juice in the fridge, you could substitute the orange juice for the liquid specified (probably water) to give it a flavoring. You do need to add something or the cakes will taste very bland.

They will taste nicer with some sort of flavouring. You can use vanilla, mint, orange or lemon essence or you can use 50g less flour and add 50g cocoa powder for chocolate cakes. You can make them coffee flavour by adding 1 tablespoon of instant coffee to 1 tablespoon of warm water and stirring until dissolved then using that as the flavouring.

Vanilla is a flavor enhancer which is why it's also used in chocolate cakes, etc. You don't have to have it, but it will make your cake taste that much better. It may not taste as good as it normally does when you use it.

No, you don't need it at all, it only adds sweetness and seretonin, both of which are found in normal sugar anyway. Also, not including it wouldn't change the consistency of the cake as it's not a principal ingredient used for binding.

Nope, they'll taste great without it - enjoy baking and of course the all important taster session afterwards - yummy - I thin i'll go and make some chocolate fudge brownies now - it's just one of those days:)
