my friend and i want to make a coconut custard pie, but don't want to go through the hassle of making our own pie crust. can anyone give me a recipe for a coconut custard pie where we can use a pre baked pie shell that you would get at the grocery store? or a brand of an unbaked pie shell i could get at the grocery store in the refrigerated section?

1 c. sugar

2 tbsp. all-purpose flour

2 eggs

1/2 stick butter, melted

1 c. milk

1 tsp. vanilla

1 (6 oz.) pkg. coconut

9 inch frozen pie shell.



Mix all ingredients and blend well. Pour into a 9 inch unbaked pie shell. Bake for 45 minutes at 350 degrees or until crust is brown and custard is firm.



I use Pet pie frozen pie shells. But if another brand goes on sale I would buy that instead. They're all the same in my opinion.

IMPOSSIBLE COCONUT CUSTARD PIE (makes it's own crust!)

Ingredients

1/2 cup Bisquick

3/4 cup sugar

4 eggs

2 cup milk

1 (3 1/2 oz.) flaked coconut

1 tsp. vanilla

1 TBS. butter, softened



Directions

Combine all ingredients and pour into 9 inch buttered pie pan. Bake at 400 degrees for 25-30 minutes until custard sets. Like magic it layers into crust, custard, coconut topping. Cool.

Buy a frozen pie crust - they are cheap. Make a coconut filling using coconut milk instead of regular milk and toast the coconut for the pie in the oven for a few minutes 5 - 8 at 350ºf but don't burn it.

Prebake the crust according to directions on the package.

Recipe for filling:

1 cup sugar

1/2 cup flour

1/4 tsp. salt

2 eggs

3 cups coconut milk heated up

1 tsp. vanilla extract

1 cup shredded coconut

Mix together the sugar, flour, salt, and eggs, with a whisk in a medium sauce pan on medium heat. Whisk in the hot coconut milk, stirring constantly. Return the mixture to low heat and stir constantly until it begins to boil. Reduce the heat to simmer, continue to stir adn cook 2 - 3 minutes. Remove the pan from the heat and add the vanilla extract. Cool to room temperature.



Sprinkle 1/3 of the toasted coconut it in the bottom of the baked pie shell. Fold one third of it into the filling.



Scrape the cooled filling into the baked pie shell and top with:

1/2 cup heavy cream whipped to soft peaks and the remaining coconut.

This is for a coconut cream pie...but it's absolutely delicious and ridiculously easy.



2 pkg. (3.4 oz. each) Vanilla Flavor Instant Pudding

2 cups Cold milk

2 cups thawed Cool Whip, divided

1 cup Coconut, divided

1 Honey Maid Graham Pie Crust (6 oz.)



Beat pudding mixes and milk in large bowl with whisk 2 min. Stir in 1 cup cool whip and 3/4 cup coconut; pour into crust

Refrigerate 4 hours or until set. Meanwhile toast remaining coconut, if desired.

Top pie with remaining cool whip and coconut.
