I'm having a party and want lots of appetizery-stuff but nothing that I have to assemble. I'm thinking of just doing a bunch of different dips with bread and crackers and veggies. I need dip recipes--I don't mind if it's complicated or uses hard-to-find ingredients, and would prefer to have a bunch of stuff that people don't find at every party. Any ideas?

BACON AND TWO ONION CHEESECAKE

6 slices bacon,cooked - (diced )

1 large sweet onion (chopped)

1 clove garlic (minced)

2 cups (15 oz.) ricotta cheese

1/2 cup half-and-half

2 Tablespoons all-purpose flour

1/2 teaspoon salt

1/4 teaspoon cayenne pepper

2 eggs

2 green onions (thinly sliced)

Assorted Crackers for serving

Cook bacon until crisp in large skillet; remove to paper towels. When cool, dice into small pieces. Cook sweet onion and garlic in drippings until tender. Drain in strainer; discard bacon drippings. In bowl combine ricotta cheese, half-and-half, flour, salt and cayenne pepper; beat until smooth. Add eggs, one at a time; beat until smooth. Reserve 3 tablespoons bacon for garnish. Stir remaining bacon, sweet onion, garlic and green onions into ricotta mixture. Lightly grease sides of an 8-inch or 9-inch springform pan; pour batter into pan. Bake @ 350 degrees for 40 minutes or until set. Remove to wire cooling rack; cool to room temperature. Garnish with reserved bacon. Serve with assorted crackers,



Substitution: Vidalia-type sweet onions are particularly good in this recipe. If sweet onions are unavailable in your area, simply substitute yellow onions.



MEXICAN TACO DIP:

1 (8 ounces) package cream cheese (softened)

1 (16 ounces) pint sour cream

1 package Taco Seasoning Mix

2 to 3 cups lettuce, chopped

1 tomato, chopped

1 small onion, chopped

1 (8 ounces) Cheddar Cheese, shredded

1 small can olives, sliced, drained

Tortilla Chips

Mix together cream cheese, sour cream and taco seasoning mix and chill overnight. The next day smooth mixture in a pan. Top with lettuce, tomato, onion and shredded cheese and olives. Refrigerate to chill. Serve with tortilla chips.



SPINACH DIP:

1 (10 ounces) package frozen chopped spinach, thawed and drained

1 (16 ounces) pint sour cream

1 cup Hellmann's Mayonnaise

3 green onions, chopped

1 package KNORR Vegetable Soup Mix

1 (8 ounces) can water chestnuts, drained, chopped

In medium bowl, stir all ingredients until well mixed. Cover; chill for 2 hours to blend flavors. Stir beforeserving. Note: If desired, spoon dip into hollowed-out round or oval bread loaf.

SPINACH DIP



Ingredients:-



-1 pkg. frozen spinach, thawed & drained

-1 pkg. frozen artichokes, chopped

-1 sm. can green chilis

-1 c. mayonnaise

-1/3 cup Parmesan cheese, grated

-1 cup Monterey Jack cheese, coarsely grated

-2 cloves garlic, minced



Method:-



1) Thaw and squeeze excess moisture from spinach using a clean kitchen cloth, cheesecloth, or strainer.

2) Combine all ingredients, reserving 1/4 c. of Monterey Jack Cheese.

3) Portion spinach mixture into individual bakng dishes or ramekins.

4) Sprinkle reserved 1/4 c. Monterey Jack over tops of each serving.

5) Bake in preheated 350 degree oven until top is bubbly.



Note:

Great served with tortilla chips or vegetable sticks.

Variation: Substitute mozzarella or Muenster cheese for the Monterey Jack.

Refried Bean Dip



1 (16oz.) can of Ortega Refried Beans

1/2 cup Ortega Mild, Medium, or Hot Thick & Chunky Salsa

Tortilla Chips



In a saucepan, heat refried beans, and salsa until warm. Spoon into serving bowl. Serve as a dip with chips. Makes about 11/2 cups.

CRAB DIP



6 oz crab

1/2 oz Miracle Whip

3 Tbsp French dressing

1 pkg cream cheese

2 Tbsp ketchup

Small amount finely chopped onion



Soften cheese and combine all ingredients in bowl. Mix and chill for 1/2 hour before serving. Serve with a variety of crackers.

SUPER EASY!!





PARTY DIP



8 oz pkg cream cheese

1/2 cup sour sream

1/4 cup mayonnaise

2 cups shredded mozzarella or cheddar cheese

Chili sauce or seafood sauce

3 green onions, diced

1 green pepper, diced

1 tomato, diced



For bottom layer of dip, beat cream cheese, sour cream and mayonnaise with a blender (I do it by hand too) until soft. Spread over pizza pan or serving dish.

Then spread 1 to 2 cups of chili or seafood sauce over bottom layer. Then 2 cups of shredded mozzarella cheese. Add diced green pepper and green onion. Sprinkle small amount of mozzarella cheese. Add tomato and any other choice of topping. Cover, chill until ready to serve.

Serve with Corn Chips/Nachos.

YUM! MY Favorite!

CURRIED DIPPING SAUCE



1 1/2 cups sour cream

1 cup mayonnaise

2 tsp dill weed

1 tsp celery seed

Dash garlic powder

1 tsp curry powder

1 tsp lemon juice



Thoroughly combine all ingredients. Chill. Serve with a platter of raw vegetables. Makes 2 1/2 cups.





These are three of my staples at any party. There's something for everybody!!

I have a GREAT crab dip recipe.



Get two cans of crab meat, and drain, its not very expensive

Add 1 package of cream cheese, some worstershire sauce, garlic salt, 1 cup of shredded cheddar cheese and a little mayo to help make it easier to mix up. Taste it and add more worstershire and garlic to taste. Its great on the club crackers.

One of my favorites is sooo easy. Just take a block of cream cheese, let it sit out a little so it isn't hard as a brick. Then you can do one of two things. You can put salsa on it and serve it with crackers, or my favorite is to put coctail sauce on it and either buy a can of real crab, or buy and shell a crab and put that all over the top. It's like a creamy crab cocktail and everyone who loves crab will love it. I serve it with crackers, and if you can find the cracked pepper kind, those are rad.

Pita Chips with Sun-Dried Tomato and Goat Cheese Spread



4 each pita, lightly brushed with olive oil

Kosher salt

12 ounces goat cheese

4 ounces cream cheese

1/2 cup chopped sun-dried tomatoes

1/2 cup pitted and chopped kalamata olives

3 tablespoons basil, cut into a fine chiffonade

2 tablespoons olive oil

1 tablespoon balsamic vinegar



Grill the pita over a moderate flame on the grill for 1 minute on each side or until you begin to see grill marks on the pita. Remove from the grill and cut into 6 pieces and sprinkle with the kosher salt.



Combine the goat and cream cheese together in a bowl. Form into a round shape and place in the center of a large plate, and press the cheese mixture down slightly. Combine the sun-dried tomatoes, olives, basil, olive oil and vinegar. Pour the tomato mixture over the cheese.



Arrange the pita chips along side the cheese mixture and serve immediately.



* This dip tastes like heaven! I made it for my friend's bridal shower and even though this recipe makes quite a bit of dip, the platter was practically licked clean within an hour. *





My Rockin' Spinach Dip



1 round loaf of sourdough bread

1 long narrow loaf of sourdough bread

1 bag of frozen spinach

1 bag of chopped walnuts (pieces should be small - no bigger than the eraser on a pencil)

1 large bottle of Hidden Valley Ranch Dressing (should be Hidden Valley and *not* low fat -- it does make a huge difference)

1 medium size container of low fat sour cream



Put frozen spinach in colander and run hot water over it to defrost. Set it aside to drain thoroughly.



Heat up a dry skillet over medium-high heat. Once it's hot, pan roast the chopped walnuts, being very careful not to burn them. Take off the heat and set aside.



In a large bowl, combine the spinach, ranch dressing, sour cream and walnuts to taste. Cover and chill (tastes even better chilled overnight).



Hollow out the round loaf of sourdough to make a sourdough bowl. Slice up second loaf of sourdough and artfully arrange on platter. Fill sourdough bowl with spinach dip shortly before serving.

Here's a REALLY easy one that everyone loves...



One block of velveeta (or store brand would work fine too)

Two cans Rotel (in the aisle with the mexican food)



Pour Rotel over velveeta and pop in the microwave (or throw in a crockpot on warm)



TA DA...let your guest spoon the dip over their chips for a no fuss appetizer. This stuff is so good I sometimes eat it for dinner :)

I like philly cream cheese, plain, very quickly nuked to get a bit of warmth and then covered in Seafood Sauce (red) WITH Bretton crackers!!!

spinach dip and sour bread... yummy!!



1- package of knorrs LEAK soup

1-package of sour cream

1-can water chesnuts

1- package frozen spinach

sourdough bread



boil spinach, mix with sour cream, nuts and leak mix. refrigerate and serve. also, serve up some salami and ritz crackers. have a good party!

Lipton onion soup has a good recipe on the back of the box.I think it's just sour cream with their onion soup.

MY WHOLE FAMILY LOVES THIS ONE. I HAVEN'T GIVEN IT A NAME YET. GIVE IT A TRY , ESPECIALLY IF YOU WANT ONE ON THE" WARM" SIDE. THE ONLY ING. YOU MIGHT HAVE TROUBLE FINDING IS A 2.25 OZ. JAR OF "ARMOUR" DRIED BEEF(ON ISLE WITH TUNA ) 8 OZ. CREAM CHEESE(PHILADELPHIA) AND ROTEL TOMATO(I USE MILD) JUST PUT MEAT IN PROCESSOR & SHREAD WELL. ADD CHEESE.DRAIN ROTEL, ADD AND I DON'T ADD ANY MORE LIQUID. GOOD WITH CORN OR POTATO CHIPS.ENJOY !
