I'm looking for a classic oatmeal cookie recipe made with prune juice in it. I was only able to find one called a healthier oatmeal apple cookie, which had apples in it. They tasted okay, but weren't very sweet and were very chewy. The recipe I'm looking for would have been an older recipe. Or does anyone know how I would go about substituting it into a recipe? Thanks!

I clipped this recipe from the newspaper many years ago:



Prune-Oatmeal Cookies

Makes 2 to 2 1/2 dozen cookies

1/2 cup butter or margarine

1 cup packed light-brown sugar

1 egg

1/4 cup prune juice

1 cup flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon nutmeg

2 cups regular or quick-cooking rolled oats

1/2 cup raisins or chopped prunes

Preheat the oven to 350 degrees. In the large bowl of a mixer, cream butter or margarine and sugar until fluffy. Beat in egg and prune juice.

Gradually beat in flour, baking soda, baking powder, salt and nutmeg until mixed. Stir in oats and raisins. Drop by heaping teaspoonfuls about 2 1/2 inches apart on greased cookie sheets. Bake for 12 to 14 minutes.

1. 1/2 cup reduced fat margarine, softened 2. 1/2 cup sour cream 3. 1 cup peeled, shredded tart apple 4. 2 eggs 5. 1 teaspoon maple flavoring 6. 1/2 teaspoon vanilla extract 7. 2 cups all-purpose flour 8. 1/3 cup brown sugar substitute (e.g., Splenda (R)) 9. 1/2 teaspoon baking soda 10. 1/2 teaspoon baking powder 2. Cooking Directions 1. In a mixing bowl, combine margarine, sour cream, apple, eggs, maple flavoring and vanilla. Combine flour, sweetener, baking soda and baking powder; add to apple mixture and mix well. Drop by heaping tablespoonfuls onto baking sheets coated with nonstick cooking spray. Bake at 375 degrees F for 9-10 minutes or until lightly browned. Cool on wire racks. Store in airtight container.

Cookies don't normally have a liquid added to them. Try adding some chopped up dried prunes instead of raisins.
