What do you think is the best type of bread for a peach tartine? ( http://www.theworldwidegourmet.com/recipes/crispy-peach-tartine/ ) If you have ever eaten these before and you have a preference tell me please, because I want to make sure the taste of the bread doesn't clash with the peaches and sugar.

I'd probably go with french bread or dessert shell or shortcake biscuit.

I would think this would go best with a shortcake (sweet biscuit) rather than a bread. The bread just doesn't seem right!

I have tried this with Thomas' Toasting Bread, couple days old so it's a little dry & stale ( it worked out great!!) Your don't want to bake alot of things with fresh breads, because they get too soggy.

French bread or sourdough

the bread not being sweet or cake like really adds to this dish...I use a wheat berry,or an 8 grain with sunflower seeds ...I like the texture.

sourdough. you want a dense bread which toasts well.
