the beef is a particular combination of lamb and beef and it somewhat is cooked in a particular way. i've got seen it interior the freezer part of the save. There are recipes for the tzatziki sauce on line. It has cucumber, yogurt, different stuff. it somewhat is uncomplicated to make.

I'm not Greek but I love Gyros.



However, I believe these have usually been beef.



If you can't find lamb, what is wrong with beef ???



However, where do you live that you can't find lamb ?

For added moisture I'd take libbyami's wonderful recipie above and add some ground pork to the mixture...



...that is if you are not looking for Kosher or Halal recipies for Gyros.

You can just get a lamb roast and have the butcher grind it for you. Then use that to make your gyros, which is essentially a tight lamb-based meatloaf.

INGREDIENTS

Souvlaki Marinade:

3/4 cup balsamic vinaigrette

3 tablespoons lemon juice

1 tablespoon dried oregano

1/2 teaspoon freshly ground black pepper



4 skinless, boneless chicken breast halves



Tzatziki Sauce (cucumber sauce):

1/2 cup seeded, shredded cucumber

1 teaspoon kosher salt

1 cup plain yogurt

1/4 cup sour cream

1 tablespoon lemon juice

1/2 tablespoon rice vinegar

1 teaspoon olive oil

1 clove garlic, minced

1 tablespoon chopped fresh dill

1/2 teaspoon Greek seasoning

kosher salt to taste

freshly ground black pepper to taste



4 large pita bread rounds

1 heart of romaine lettuce, cut into 1/4 inch slices

1 red onion, thinly sliced

1 tomato, halved and sliced

1/2 cup kalamata olives

1/2 cup pepperoncini

1 cup crumbled feta cheese



DIRECTIONS

In a small bowl, mix the balsamic vinaigrette, juice from 1/2 lemon, oregano, and 1/2 teaspoon black pepper. Place chicken in a large resealable plastic bag. Pour marinade over the chicken, seal, and refrigerate for at least 1 hour.

Preheat an outdoor grill for high heat.

Toss the shredded cucumber with 1 teaspoon kosher salt, and allow to sit at least 5 minutes. In a medium bowl, mix the yogurt, sour cream, 1 tablespoon lemon juice, rice vinegar, and olive oil. Season with garlic, fresh dill, and Greek seasoning. Squeeze the cucumber to remove any excess water; stir into sauce. Season to taste with kosher salt and pepper. Refrigerate until ready to use.

Remove chicken from marinade and place on prepared grill. Discard remaining marinade. Cook chicken until juices run clear, about 8 minutes on each side. Remove chicken from heat, and allow to sit about 10 minutes before slicing into thin strips.

Place pita rounds on the grill, and cook for about 2 minutes, until warm, turning frequently to avoid burning. Arrange warmed pita, sliced chicken, lettuce, onion, tomato, olives, and pepperoncini on a serving platter. Serve tzatziki sauce and feta cheese in separate bowls on the side. Stuff pita pockets with chicken and toppings to serve

INGREDIENTS

1/2 pound turkey tenderloin, cut into 1/4 inch slices

1 teaspoon olive or canola oil

1 1/2 teaspoons Greek seasoning

1 medium cucumber, peeled

2/3 cup low-fat sour cream

1/4 cup finely chopped onion

2 teaspoons dill weed

2 teaspoons lemon juice

1 1/2 cups shredded lettuce

8 thin slices tomato slices

2 tablespoons crumbled feta cheese

4 (6-inch) pita breads, warmed



DIRECTIONS

In a nonstick skillet, saute turkey in oil for 5-7 minutes or until no longer pink. Sprinkle with Greek seasoning; set aside. Cut two-thirds of the cucumber into thin slices; finely chop remaining cucumber. In a bowl, combine the chopped cucumber, sour cream, onion, dill and lemon juice. Place lettuce, tomato, sliced cucumber, turkey and feta cheese on top of pita breads. Top with cucumber sauce. Bring edges of pita over filling and secure with a toothpick.

Where are you located? You shouldn't be having a hard time finding lamb especially not at this time of year as this is the season for it (I know, I love lamb and make it all the time). I find it all over the place, Albertons, Ralphs, Henry's. But they always have a small section for it. Sometimes they have a larger amount, again, depending on the time of year. You may have to ask the butcher. I don't know that I would even make gyros without lamb. I love Greek food as well but ya gotta do it right! haha. You might want to try calling around (saves ya gas) and see what people have in stock. Again it would help to know where you are located. If you were anywhere near me I could tell you exactly where to go to get some. Good luck!

probably not gonna taste too good without the lamb. find a butcher shop in your area... they'll even grind it for you
