I want to use my pressure cooker but a beginner HELP!!!!!?

I want to use my Presto 16 quart Pressure Cooker to make a mess of Pinto Beans, Black Eyed Peas and Pork Neck Bones. I know I think I should soak the beans and peas and precook the neck bones and put them in my cooker with seasonings but not sure if I only fill cooker half way then add pressure. But not sure on how long to cook, and don't know if it is 5, 10, or 15 pounds of pressure for how long.. I'm a beginner to pressure cooking and just some help to make this delicious meal for my hard working fiance along with Butter Milk Cornbread (Which I got that part right LOL).. just need someone to please help me shed some light on the Pressure Cooker for me. PLEASE HELP!!!!!!

Never fill your pressure cooker more than half-way when pressure cooking beans (they expand quite a bit)!



You can soak or quick-soak the beans before pressure cooking - this will ensure that they are all evenly cooked - cooking from dry can sometimes cause a mix of cooked and "crunchy" beans. Here's how to quick-soak if you want to do it RIGHT NOW!!

The cooking time for black-eyed peas is incredibly fast (just minutes) so the neck bones will likely not be cooked in time. Here is a timing chart of pressure cooker times. Pressure cook the neck bone and then add the beans and pressure cook together.

My favorite thing to make with a pressure cooker is anything with beans. Do a fast soak with the beans (cover beans with boiling water, let stand an hour, drain and rinse.) Then put beans in the pressure cooker with 2-3 times the volume in water, and bring to pressure. Kidney beans I would cook for about 30 minutes at 15 lbs pressure. Pinto beans, 35 minutes, 15 lbs pressure. Other types take more or less time. Key thing is not to add salt to the beans or cook them with anything containing salt. Once the beans are tender, however, salt is OK and you can add them to whatever dish you want to make, or add meat, sauteed onions, etc for chili. Whatever you want to do. Pressure cooked beans are tender and flavorful, and don't need to bake in the oven all day or all night. I like making my own beans because I can do them without a lot of fat and salt and other stuff I don't need. And they're pretty cheap. A pound of dry beans is a lot of meals. There are good cook books out there that cover pressure cooking. Check your library, or a bookstore, or online.

It works best to soak your beans over night in salt water. I like to grill my neck bones up alittle or quick fry them in some bacon grease. Put all your ingredients in your cooker and cover double the beans...its about half way. I use chicken stock. Start to bring to a boil slowly..when the stew or beans start heating up..get your lid locked on. Allow to cook at a medium high. Dont put your weight on the steam spout yet..allow the cooker to start to expell a good stream of steam for about 10 minutes. Now put your weight on the steam spout. Watch the pressure..you want to go 10psi for about an hour and a half. If it starts getting to much pressure...reduce the heat. By now i keep it on low and it stays at about 10psi. Allow cooker to loose all pressure before breaking seal..and do it quick...the steam is very hot..i use big hand mits. If the beans are alittle tough..just simmer without the lid until the desired texture is achieved. Hint: never turn your heat up to high and leave cooker unattended..this will result in a catastrophe.

why would you have to precook the neck bones and then cook them again??

Does your pressure cooker come with an instruction book and recipe guide??? Use them at first to get the hang of using a pressure cooker. This link has some good information and a recipe.

I simply googled neck bones and beans in a pressure cooker and many recipes popped up. This one looked good.
