I am making an oriental slaw, and I was just wondering what I could substitute the choy sum with? I was thinking bok choy.

Choy sum or yu choy even gai lan will taste weird even bitter for making slaw or salad. these veggies are usually used in stir fries. I have seen some people use the white part of bok choy stem as slaw but usually the Chinese even Japanese use cabbage, jicama , fennel, raddicole, radish, or daikon . The Vietnamese use banana blossoms and banana leaf stems for slaw

Bok Choy: from a CSA member: Bok choy: (the bok choy in the box was amazingly good!) 1 T oil 1.5 lbs bok choy 1 T light soy sauce 2 T chicken stock or water Heat wok over moderate heat. Add oil and then bok choy. Stir fry 3-4 minutes, until leaves have wilted a little. Add soy sauce and chicken stock/water. Continue to stir fry for a few more minutes, until the bok choy is done until still slightly crisp. Not familiar with chou sum .have used bok choy in stir fry dishes. Use any cabbage shredded thin and also shred peeled carrots with it. There is also jicama that is similar to a water chestnut is good in slaws.

for an oriental slaw you'd be better using chinese cabbage or lettuce as it's sometimes called. it has the same tight crinkled head of leaves that an english cabbage has and is therefore easy to cut into shreds. you could add water chestnuts to continue the oriental theme.
