I have been invited to a potluck, and want to bring a stuffed pepper of some kind. However, I am a vegetarian. Are there any stuffed pepper recipes that I can use that don't include any meat?

For a quick & easy stuffed pepper recipe,buy a packet of Uncle Ben's Mexican rice or something similar and stuff the pepper with that.You could add some grated cheese to top it off.

Choose peppers which sit nice and straight in a pan. Add oil to a pan and sit the pepper in.
Slice the top (with stem) off peppers. Then make the filling. Chop, Onions, garlic, celery, tomatoes, couscous (soaked as on packet) or rice or any other grains or seeds. A combination is good. Add a handful of raisins or sultanas or seeds or a combination if you like. Add an egg or two or if Vegan add 3 Tablespoons chia seeds to combine. Add chopped walnuts, cashews or pinenuts if you wish. Also add soya beans, white beans - ie any beans or vegetables if you wish. Make sure you add salt or herbs or chilli. A herb and garlic salt seasoning is great. Fill the peppers, add cheese on top if you wish and bake for about 40 mins at 180 deg C or until cooked through.
While the oven is on, roast a pan of vegetables, like potatoes, sweet potatoes, pumpkin, onions, carrots if you wish.

Yes. Try rice mixed with vegetables. Or google "vegetarian stuffed peppers".
They are nice stuffed with rice, mixed vegetables, herbs and cheese.
Vegetables can include sweet corn, peas, mushrooms, tomato.

you can use a mixture of wild and brown rice with chopped mushroom, onions and garlic.
Or use kasha and mushrooms.

I used to make vegetarian cabbage rolls with stuff like that before I retires as a chef.

There are plenty of substitutes you could use, try making it how you normally would and use mushrooms instead of hamburger or sausage, since mushrooms are very meaty and are a good substitute for meat.

I stuff mine with rice made with tomato sauce, mince, peas and cheese. Leave the meat out.
