I would say Make a delicious stir-fry that would include all of the leftover goat meat and add just a touch of the leftover dog meat and about a pound of horse flesh and that sould take care of all your leftover problems !!

Goat Cheese Lasagna(10 servings) 3 cups marinara sauce 8 lasagna noodles (I use the no pre-cooking type) 3 (125 g) containers soft goat cheese 2 eggs 1/2 cup fresh basil leaves, chopped 150 g shredded mozzarella cheese (NOT the fresh, but the brick-packaged regular) 1 teaspoon salt 1/2 teaspoon pepper 3 (125 g) packages fresh mozzarella cheese, thinly sliced 1/4 cup freshly grated parmesan cheese or romano cheese Beat the eggs then add the drained goat cheese, the shredded mozzarella, the basil leaves, salt and pepper, and mix till creamy and everything is incorporated well. Coat the bottom of a 13X9X2 inch baking dish with a thin layer of the sauce. Arrange half the lasagna noodles in the pan. Cover with half the goat cheese mixture. Cover this with half the mozzarella slices. Cover this with half the marinara sauce. Repeat layers: noodles, goat cheese, mozzarella slices and sauce. Sprinkle parmesan or romano on top. Bake in pre-heated 375°F oven for 30 to 35 minutes, or till bubbly and the cheese is nicely melted on top. Let stand 10 minutes before serving.

CURRIED GOAT STEW



2 lb. goat or mutton meat, trimmed and cubed

1 tsp. salt

1 1/4 tsp. ground pepper

4 tsp. curry powder

4 tsp. lard or oil

1 lg. onion, chopped

1 1/2 c. chicken broth

2 chili peppers, seeded and chopped

2 med. to lg. potatoes, peeled and diced



Season meat with salt, pepper and curry, set aside for one hour. Heat shortening in large saucepan, add meat and brown lightly; add onions, cook until wilted. Add chicken broth and chili peppers, cover and simmer over low heat 1 1/2 hours. Skim excess fat. Add potatoes and cook 20 minutes more until potatoes are fork tender and the gravy thickens.

Serves 4-6.



For an Italian touch, substitute 2 cloves crushed garlic for curry powder, and add chopped parsley over meat with the chili pepper being optional.

Curry it and freeze it. In my country there is no such thing as leftover goat meat, it is such a delicacy.

make a curry! One of my old boyfriends was greek and I remember his cousin eating a goat's head - yum!!!

freeze it, or cook it...



i might suggest a goat stew, or a marinate with turkish spices and bbq-ed or grilled in oven i guess..
