Why aren't there any leafy edible vegetables to make salad with?

I like salads. But I hate that salads always need to have lettuce.

There isn't really any other options.

Swiss chard could be one, but no one likes to eat a bowl-full of it.

Spinach is another, but again, you can't eat a bowl-full of it.

Why isn't there some other leafy edible vegetable to substitute for lettuce in salads?

cabbage for cole slaw, arugula, kale, turnip greens, collards, dandelion greens, beet greens, bok choi, How big of a salad do you want? How about some broccoli raab, lamb's quarters, pigweed. You can also make potato salad or egg salad or macaroni salad or three bean salad. ETC

There are so many different kinds of salads out there from salads based on lettuce or different kinds of baby lettuce leaves to:



Spinach salads

Macaroni Salads

Chicken Waldorf Salads

Rice salads

Orzo Salads

Fruit Salads

Mediterranean Salads

and the list goes on.



You can make a salad with celery, carrots, radishes, radicchio, Belgian Endive, cucumbers and tomatoes without "lettuce" in it. But Belgian Endive and Radicchio are of the lettuce family. You can even put water chestnuts, artichoke hearts, or Hearts of Palm in it if you wish.

Sure there is. There's no salad police. You can always make one without lettuce and add everything else in.

Carrots

Cucumbers

Zucchini

Red Onion

Red and Green Peppers

Radishes

Celery



Boiled Eggs

Grilled Chicken

Low Fat Cheese

Homemade or Store Bought Crutons

Crackers

First of all, a salad doesn't 'have' to have leafy greens. One of my favorite salads is halved cherry tomatoes, cucumber slices, and onions. Drizzle with vinegrette and sprinkle with a bit of blue cheese. A lettuce-free salad.



And if you must have leafy greens--what's wrong with using spinach as a salad base? It's certainly possible to eat a bowlful of young tender spinach leaves. Same with dandelion, chicory, or dock, assuming you can get them.

There are many kinds of lettuce, my favorite it butter leaf lettuce. Spring mix is also really good, which is a mix of all kinds of different greens....arugula, dandelion, frisée, mizuma, mâche, radicchio, oak leaf, endive and sorrel. Maybe look a little harder next time your at the grocery store?
