Ahh, I can't remember the actual name of it, but it was soooo good!
I had it at my boyfriend's step-dad's parent's house. She said it was made out of peanut butter, or just peanuts. Something like that.
But it was sorta spicy and you put it on your rice and vegetables I believe.
Does anyone know what this is called and how to make it?

PEANUT SAUCE

2 tablespoons smooth peanut butter

2 tablespoons soy sauce

1-2 cloves garlic, minced or chopped

1/4 cup water

1 tablespoon brown sugar

juice from half a lemon (can be less, depending on your tastes)

In a non-stick pan, combine all ingredients, stirring constatntly over medium heat until peanut butter has melted. You can do this in the microwave too, for about 30-40 seconds.

Tastes great over noodles and vegetables, or as a sauce over chicken or beef.

I think you had something like a peanut sauce that is pretty common in West Africa. Try this- it's usually made pretty spicy- you can tone it up or down as you like.

2 or 3 chopped garlic cloves

1 large chopped onion

1 large green pepper, 1/2 "cube

1 large zucchini squash, cube1/2"

2 cups or more fresh or frozen okra.

Saute' vegetables in veg. oil til onions are clear, not brown.

1 can tomatoes in juice (15oz) or more if desired

1 can 12 oz V8 juice

1 tbsp crushed red pepper

1 tsp black pepper

2 or 3 jalapeno peppers, seeded , chopped fine

1 tsp cinnamon, 1/2 tsp clove, 1 tbsp roasted chili powder

1 cup or more, fresh peanut butter ( or your favorite brand)

Add tomato and juice and spices and peanut butter to vegetables.

Stir frequently, over low heat, taste for salt.

Cut chicken or pork into uniform size pieces, saute in a little oil til well browned, add to peanut sauce and continue cooking on low heat.

Served traditionally over rice or boiled yucca or potato.
