i would love some diabetic american recipes but i live in the UK at the moment, so not all ingredients are readily available, for example i cannot get instant vanilla pudding mix, anyone any ideas please, thanks a bunch

I am a former chef and would make it with a packet of custard powder sweetened with an artificial swetener/sugar, the tablets or the powdered ones, also use unsweetened coconut, if you have the other kind, rinse it under warm water to remove the sugar, fold in a tub of fat free topping either the packages of Whippet or the US Cool Whip type by Birdseye in the freezer section at Tesco or ASDA, buy one of the pre packaged cookie crumb crusts or make a light version with filo pastry and diet marg.
I am not only a chef, I am a diabetic and do alot of diabetic cooking events, so try to limit first the sugar which is the easiest, and try to reduce the fat, another problem for us diabetics the fat in food issues, any further querys just let me know ere I can help, my e-mail is open.

You were given some recipes, but be aware that packaged coconut has alot of sugar in it! Even if you substitute Splenda, the coconut has sugar! You can successfully substitute Splenda for sugar in just about any recipe though (my husband has diabetes; I've been a dessert caterer over 30 yrs and use it alot for him). You might be able to find a coconut extract to use with the Splenda recipes that were given though.......

Ingredients
2 eggs, well beaten
4 tbsp butter, melted
1 c coconut
4 pkg splenda
1-3/4 c milk
1 tsp vanilla
1 unbake 9" pie shell
Directions
Mix all ingredients and pour into unbake pie shell.
Bake at 350 for 45 mins or til center comes clean with toothpick.

Surely they have sugar substitutes in the U.K. Just use Splenda or equivalent to sugar in any recipe and make your own filling.
