Chicken Cacciatore



Ingredients:

6-8 chicken thighs, or 1 whole cut up chicken.

Note: Traditionally in Chicken Cacciatore, the chicken is cooked with the skin on. We like to remove it on any chicken parts other than the legs and the wings. It’s much easier to eat this way. (And, it’s soooo good, you don’t want to be bogged down by having to remove skin all the way through your portion!) The skin doesn’t add much, if anything, to the dish, in our humble opinions.



About 1 T extra virgin olive oil. (The majority of the oil for this dish will come from cooking the bacon and browning the chicken).

4 slices of smoked bacon or pancetta

1 medium onion, coarsely chopped

1 large celery rib, coarsely chopped

2 carrots, peeled and coarsely chopped

5-6 cloves garlic, finely sliced

3-4 cups of the above mentioned tomato sauce

About 4 cups sliced mushrooms (we like the brown Italian ones [crimini])

3 T balsamic vinegar

2 T Worcestershire sauce

About 10 black olives, sliced (If you really like them, use more).

Salt and pepper to taste

¼ cup Italian parsley for garnish



Preparation:

Add the 1 T of olive oil to a skillet large enough to hold all of the chicken and sauce ingredients. It will need a tight fitting cover, preferably. If you don’t have a sizable skillet with a tight fitting lid, you will have to improvise a lid or substitute a stock pot.



Cook the bacon until it is crisp, then place it on a paper towel to drain and cool. When it is cool, chop it coarsely.



In the same skillet with the bacon drippings, brown the chicken thoroughly on all sides. Remove from pan and reserve.



There should still be a couple of tablespoons of oil left in the skillet. If there are not, deglaze with about 3 T of sherry or chicken stock, or add a bit more olive oil.



Add the onions, celery, carrots and garlic. Reduce heat to medium low and cover the pan. Cook for about five minutes. This method will help the vegetables to release their wonderful juices.



Remove the lid and add the bacon, balsamic vinegar and the Worcestershire sauce. Mix well with the vegetables.



Stir in the mushrooms and black olives, then add the tomato sauce (reduced to canned tomato sauce consistency) and stir all in well.



Cover and simmer over medium low heat for 20-25 minutes. Turn the chicken a few times during this process so it cooks evenly.



Garnish with Italian parsley.

Good Summertime and Vegetarian Dish... Pasta Primavera.

Assorted fresh vegetables: onion, asparagus, red bell pepper, zucchini, egg plant, tomatoes, etc., all cut into bite size pieces. Sautee in olive oil with garlic, sweet basil, salt and pepper. Meanwhile cook any pasta, I like ziti or a similar cut, drain well and toss with the vegetables. Serve topped with grated cheese. Extra EVOO can be sprinkled over top, also.

Italian Calamari Con Pomodoro Recipe



Serves/Makes: 6



Ingredients:



* 3 pounds frozen squid, cleaned and cut into strips

* 4 tablespoons olive oil

* 1 tablespoon parsley, chopped

* 2 cups crushed tomatoes

* 1/2 cup red wine

* 2 garlic cloves

* Salt and pepper



How to cook:



* Heat oil in saucepan. Brown the garlic.

* Add squid, and saute about 10 minutes.

* Add salt, pepper, and wine, and cook about 10 minutes more.

* Add tomatoes, and parsley, cover, and simmer for 15-20 minutes.

* Don't overcook the squid or it will turn into shoe leather!

CREAMY PASTA PRIMAVERA!



RECIPE:

12 ounces pasta, bowtie noodles

2 yellow squash, thinly sliced

10 ounces asparagus spears, cut in 2" pieces

8 ounces baby carrots, cut lengthwise, half

2 tablespoons all-purpose flour

2 cups skim milk

1/4 cup sour cream, light

2 tablespoons Dijon mustard

2 tablespoons fresh lemon juice

1/2 teaspoon salt

1/2 teaspoon pepper

2 ounces feta cheese, crumbled



Add pasta to a large pot of boiling water and cook 10 minutes. Add squash, asparagus and carrots and cook 8 minutes or until pasta and vegetables are tender. Drain and place in a large serving bowl.



Meanwhile put flour in a large skillet. Slowly whisk in milk until blended, taking care to get into corners of skillet. Bring to a boil over medium-high heat, stirring often. Reduce heat to low and simmer 3 to 4 minutes, stirring constantly, until sauce thickens slightly. Remove from heat, whisk in sour cream, mustard, lemon juice, salt and pepper.



Pour over pasta mixture and stir to mix and coat. Sprinkle with cheese.

Nice and simple, Tortellini al Pesto. Cook some tortellini in boiling water, drain, add a spoonful or two of pesto sauce. Delicioso and easy.
