is it better to have a crust on the bottom and top or just the top? and how should I cook the chicken? boil? thanks!

Boiling the chicken is the best way to make it tender. Add a few cups of water, bring it to a boil, and then lower the heat and let it simmer slowly..until fully cooked. Remove any bones, And as far as the crust, it works if you have just a top crust, but it holds together nicely if you have top and bottom crusts.

I like it with a crust on the bottom and top, but just a top crust is fine - you'll save on calories. The recipes I've seen for chicken pot pie simmer the chicken in broth in a skillet. You could boil it - I would heat it to boiling in a pot of water and then turn off the burner, put a lid on it, and wait 15 minutes. I've found it doesn't get tough this way.

Depends.

Using pie dough, use a top AND bottom crust.

Using biscuit dough (or bisquick mix), it will be thick, so just the top crust.



Bake the chicken. Afterwards, cut into bite-sized pieces.

Make gravy from the juices.

Cook up some frozen mixed vegetables and boil some potatoes separately (peeled and cut into bite-sized pieces).

This is your filling.

I only do tops. The bottoms are always soggy, this eliminates the sog and extra calories. I use puffy pastry and individual 3 cup deep oven-proof soup bowls. The chicken I either roast the day before then debone or just stir fry (if using boneless thighs) in the pot I'm making the filling.

Just on the top is healthier, but having a crust on the top and bottom tastes best!



The bottom crust is yummier than the top, in my opinion. It absorbs all the flavors in the filling and get's nice and soft. :)

Both, bottom and top for the pie, and you can boil, or bake the chicken, let it cool, and tear it from the bone.

meat pies are best if they're encased in pastry in my opinion, so bottom and top. boiling or poaching the chicken is ideal.
