Here's a great recipe for you.

Fresh Apple Cake

Ingredients for cake:

* 3 cups diced Granny Smith apples, about 2 apples

* 1 cup lightly toasted chopped walnuts

* 2 teaspoons vanilla extract

* 2 teaspoons ground cinnamon

* 3 cups all-purpose flour

* 1 teaspoon baking soda

* 1 teaspoon salt

* 2 cups sugar

* 1 1/4 cups vegetable oil

* 3 eggs

Honey Glaze:

* 1 cup confectioners' sugar

* 2 tablespoons honey

* 2 tablespoons milk

Directions

Glaze: Add all the ingredients to a small bowl and stir until smooth. Set the bowl aside.

Cake: Preheat the oven to 325 degrees F. Lightly grease a Bundt pan or tube pan.

In a bowl, mix together the apples, walnuts, vanilla, and cinnamon. In a separate bowl, sift together the flour, baking soda, and salt.

Using an electric mixer beat the sugar, oil, and eggs in a large bowl. Add in the dry ingredients and beat until completely combined. Fold in the apple mixture.

Scrape the batter into the prepared pan and bake for 1 hour and 30 minutes or until a tester inserted into the middle of the cake comes out clean.

Allow the cake to fully cool in the pan, about 1 hour, and then turn it out onto a plate.

Drizzle the apple cake with some of the honey glaze.

Serve and Enjoy

Apple Crisp



1 stick margarine or butter, softened

3/4 c. oats

3/4 c. brown sugar

1/4 c. sugar

3/4 c. all purpose flour

1 tsp. cinnamon

apples, peeled, cored & sliced



Preheat oven to 350º. Peel, core & slice enough apples to cover the bottom of a 9x13 dish. Depending on the size of the apples, 4 - 5 should do it. Mix together the other ingredients and sprinkle on top of the apples. Bake at 350º for 45 minutes.



You can also do this on the stove. Cook the apples in a saucepan or in the microwave. In a skillet, melt the margarine or butter with the oats. Stir the other ingredients together in a small bowl and then add to the butter/oats. Stir until it's mixed well. Put some of the apples and some of the crisp mixture into a bowl and eat.

You don't want something with just the hint of apples....you want something that will really let you get the full enjoyment from those apples.

This is a recipe I have had for many years...it is delicious!

FRENCH APPLE PIE

oven temp. 425°F

1/2 cup sugar

3 TBS flour

1/4 tsp. ground nutmeg

1/4 tsp. ground cinnamon

dash of salt

5 cups thinly sliced pared tart apples. (about 5 med.)

Prepare pastry. Mix sugar, flour, nutmeg, cinnamon and salt.

Stir in apples. Turn into pastry lined pie plate. Top with crumb topping.

Bake 40-50 minutes. Cover with foil the last 10 minutes.

Crumb Topping

1 cup all purpose flour

1/2 cup brown sugar

Mix. Add;

1/2 cup margarine.

Cut the margarine in until it is small pieces (not completely blended)

Apple and Honey muffins



Ingredients (See nutrition)



2 egg whites

240g (8 oz) wholemeal flour

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

170ml (6 fl oz) skimmed milk

4 tablespoons vegetable oil

4 tablespoons honey

110g (4 oz) chopped apples



Preparation method



1.Preheat oven to 190 C / Gas mark 5. Lightly grease one 12-cup muffin tin, or line with paper muffin cups.



2.Lightly beat egg whites.



3.In a separate bowl, mix dry ingredients thoroughly.



4.In a separate bowl, mix together milk, oil, honey and apples.

Gently fold in egg whites to the wet mixture. Add the wet mixture to the dry ingredients.

Fold together until just moistened. Batter will be lumpy.



5.Fill greased muffin tins two-thirds full. Bake about 20 minutes until lightly browned.

APPLE WRAPPER PIE...NO PIE DISH NEEDED! Pastry for One-Crust Pie

___ cup packed brown sugar

___ cup all-purpose flour

_ cups thinly-sliced peeled tart- apples (4 medium)

_ tablespoon butter or stick margarine

Granulated sugar, if desired

1. Heat oven to 425°. Make pastry as directed except roll pastry into 13-inch circle. Place on large ungreased cookie sheet. Cover with plastic wrap to keep it moist while making filling.



2. Mix brown sugar and flour in large bowl. Stir in apples. Mound apple mixture on center of pastry to within 3 inches of edge. Cut butter into small pieces; sprinkle over apples. Fold edge of pastry over apples, making pleats so it lays flat on apples. Sprinkle pastry with sugar.



3. Bake 30 to 35 minutes or until crust is light golden brown. To prevent excessive browning, cover center of pie with 5-inch square of aluminum foil during last 10 to 15 minutes of baking. Cool on cookie sheet on wire rack 1 hour, or serve warm if desired.

Wash apples. Remove cores to 1/2 inch of the bottom of the apples. It helps if you have an apple corer, but if not, you can use a paring knife to cut out first the stem area, and then the core. Use a spoon to dig out the seeds. Make the holes about 3/4-inch to an inch wide. 2 In a small bowl, combine the sugar, cinnamon, currants/raisins, and pecans. Place apples in a 8-inch-by-8-inch square baking pan. Stuff each apple with this mixture. Top with a dot of butter (1/4 of the Tbps). 3 Add boiling water to the baking pan. Bake 30-40 minutes, until tender, but not mushy. Remove from the oven and baste the apples several times with the pan juices. Serve warm with vanilla icecream on the side. Makes 4 servings.

Without a doubt apples are my favorite fruit to bake with , followed closely by blueberries .



Apple Crisp



1/4 c. sugar

1 tbsp. cornstarch

3/4 tsp. cinnamon

1/3 c. lemon juice

6 c. peeled , cored , sliced apples

1/3 c. raisins

1/2 c. flour

1/4 c. b. sugar

1/4 tsp. nutmeg

1/3 c. butter

3/4 c. rolled oats

Preheat oven to 350 degrees F. In small saucepan combine sugar , cornstarch and cinnamon . Add juice and mix well . Over med. heat bring to a boil ; cook and stir until slightly thickened and clear . In lg. bowl , combine apples and raisins with lemon mixture ; mix well . Turn into an 8" square baking dish . In small bowl , combine remaining ingredients and sprinkle over top of apples . Bake 30 - 40 min. until golden .



Here are two of mine that are a little twist on the old stand by apple pie . Very easy to make and bake .



Maple Cream Apple Pie



1 baked 9 " pie shell

1 unbaked 9" pastry for top

6 - 7 apples peeled and sliced

1/2 c. sugar

1/2 tsp. cinnamon

1 1/2 tbsp. cornstarch

1/4 c. maple syrup

2 tbsp. whipping cream

In a small bowl combine apples , sugar , cinnamon and starch . Fill pie shell . Mix syrup and cream and pour over apples , reserving 2 tbsp. Place crust on top and cut slits across pastry . Brush with maple cream . Bake at 450 degrees F. for 10 min. . Lower to 350 and bake 45 min.



Coconut Crunch Apple Pie



Filling :

4 c. apples , sliced

1/2 c. sugar

1/2 tsp. cinnamon

2 tbsp. flour



Topping :

1/2 c. flour

1/4 c. b. sugar

1/2 tsp. cinnamon

1/4 c. butter

1/2 c. coconut

1/2 c. walnuts , chopped

Mix filling and pour into pie shell . Mix topping ingredients and sprinkle over top . Bake at 400 degrees F. for 40 - 45 min.



Apple Dumplings



Dough :

2 c. flour

2 1/2 tsp. b. powder

1/3 c. butter , cold

1/2 c. milk

Sauce :

1 c. D . B. sugar

1 1/2 c. water

1/3 c. butter

3/4 tsp. cinnamon

6 apples , peeled , cored

Cut butter into dry ingredients to form dough . Moisten ingredients with milk and form into a ball . Roll out in rectangle and cut into squares .

Peel and core the apples , then cut in half . Place half an apple on each square . Wet edges of dough and press into a ball around the apple . Set dumplings in a pan . In a small saucepan , mix sauce and on low heat only until dissolved and not heated through .Pour sauce over the pan and bake at 375 degrees F. for 1 hr.



Steamed Apple Dumplings



1 egg

2 c. flour

3 tsp. b. powder

2 tbsp. butter

enough milk to moisten

Mix like pie dough . Beat egg and b. powder . Cut in butter and add milk to moisten . Roll out into a rectangle and cut into squares .Place 1 peeled , cored apple in the center of each and sprinkle with cinnamon . Wrap the dough into a ball and steam for 1 hr.



Glazed Apple Pie Squares



2 1/2 c. flour

1 c. cold butter

1 egg , separated

3 - 4 tbsp. milk

1 c. crushed cornflakes

9 c. thinly sliced peeled apples

1 c. + 2 tbsp. sugar , divided

2 tsp. cinnamon

1/2 tsp. nutmeg

In a lg. bowl cut butter into flour until mixture resembles coarse crumbs . In a measuring cup , combine egg yolk and enough milk to measure a 1/3 c. Gradually add to the flour mixture , tossing with a fork until the mixture forms a ball . Divide dough in half . Roll one portion into a thin 15 x 10 " rectangle . Transfer to an ungreased 15 x 10 x 1 " baking pan . Sprinkle with corn flakes . In a lg. bowl combine the apples , 1 c. sugar , 1 1/2 tsp. cinnamon and nutmeg , toss to coat . Spoon over crust .

Roll remaining dough into a thin 15 x 10 " rectangle ; place over apple pie filling . Beat egg whites and brush over the pastry . Combine remaining sugar and cinnamon ; sprinkle over top . Bake at 350 degrees F. for 45 - 50 min. or until golden brown .

Glaze :

1 c. powdered sugar

1/2 tsp. vanilla

1 - 2 tbsp. milk

Combine the powdered sugar , vanilla and enough milk to achieve drizzling consistency . Drizzle over warm pastry . Cool completely , then cut in squares .



Oh yes , do not forget apple sauce . If you need some simple instructions , do not be afraid to ask .

apple cinnamon muffins-

Ingredients

1 1/2 cups all-purpose flour

3/4 cup white sugar

1/2 teaspoon salt

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/3 cup vegetable oil

1/3 cup milk

2 apples - peeled, cored and chopped



1/2 cup white sugar

1/2 cup butter, cubed

1 1/2 teaspoons ground cinnamon

Directions

1.Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.

2.Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.

3.In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.

4.Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

1 (9 inch) pie shell

6 cups thinly sliced apples

1 tablespoon lemon juice (optional)

3/4 cup white sugar

2 tablespoons all-purpose flour

1/8 teaspoon ground nutmeg

1/2 cup raisins (optional)

1/2 cup chopped walnuts (optional)

1/2 cup all-purpose flour

1/2 cup packed brown sugar

3 tablespoons butter

Directions

1.Preheat oven to 375 degrees F (190 degrees C).

2.Place sliced apples in a large bowl. Sprinkle with lemon juice if desired. In a small bowl, mix together white sugar, 2 tablespoons flour, cinnamon, and nutmeg. Sprinkle mixture over apples. Toss until apples are evenly coated. Stir in raisins and walnuts if desired. Spoon mixture into pastry shell.

3.In a small bowl mix together 1/2 cup flour and brown sugar. Cut in butter or margarine until mixture is crumbly. Sprinkle mixture over apple filling. Cover top loosely with aluminum foil.

4.Bake in preheated oven for 25 minutes. Remove foil and bake an additional 25 to 30 minutes, until top is golden brown. Cool on a wire rack.

2.Butter a 7x11 inch baking pan. Separate biscuit dough into 8 pieces. Flatten each piece of dough into a circle. Wrap one biscuit around each apple half and place, seam side down, in pan.

3.In small bowl, combine sugar, water, melted butter and vanilla. Pour mixture over dumplings in pan. Sprinkle cinnamon on top. Bake 35 to 40 minutes, until golden. Serve hot.

I have a great apple-cherry cobbler recipe I've used myself. If you don't have cherries, you could double the apples.
