How do I use stock cubes in a soup recipe?

On a soup recipe and many soup recipes it says to use vegetable stock. The recipe I'm interested in says "850ml vegetable stock". Does this mean I use one stock cube and add water till its 850ml? Or do I need to use more than one stock cube?


Don't say "make your own stock" because I'm NOT like a housewife who has loads of time on my hands!

Kind of difficult to properly answer when we don't know how much a stock cube makes. But what I would do is following the directions on the stock cube container and then do the measurements for the soup.

PS: I'm not a house wife either and work 40 hours a week. Making stock doesn't take as long as one may think. I make a large pot of chicken stock and store it in the freezer. I start it on a Saturday morning and in the evening I put them away in 2 cup size containers I buy from Smart & Final. Not a time consuming task, but that's me.

A cube is to make one cupful so use 2 cubes if you want it strong and only one if there is going to be a lot of other tastes as well. They are high in sodium so if you have used any salt already use only one



The main thing is to taste test as you go and remember it is always easier to add a little more than fixing a FU if you have added too much of something

For my soup recipes for a litre of soup, I use 2 cubes. For 500ml, I use 1 cube.



There should be instructions on the packet, but these are written by people, who may have a vested interest in us using lots of their products. If I followed the instructions on my box of OXO cubes, 850ml of water requires 4.47 cubes.

There are boxed vegetable and chicken stock with no MSG at the grocery stores... read the labels. There are also healthier bouillon cubes with no MSG. Consider getting that next time.

I would use two stock cubes in 850mls. They can be quite salty though so avoid adding any extra salt.
