Grilled Tuna Steaks

•Oftentimes when cooking fish on the grill, it's recommended to use a fish basket. However, tuna does not need a fish basket for grilling, but use one if that makes you more comfortable. Alternatively, cover the grill with aluminum foil. Oil lightly to keep fish from sticking. Use a spatula for turning fish.

•Preheat grill to medium; reduce heat slightly before placing fish on grill.

•Fish should never touch flame directly, and it doesn't take long to cook, so keep a close eye on your grilled tuna steaks. Tuna is done when opaque throughout. Steaks that are one inch thick should take about 8 minutes to cook. Fish that "flakes easily when touched with a fork"--the standard doneness test in many cookbooks--is actually overdone!

•Remove from heat, cover with foil and let rest briefly before serving.

Paul had a very good recipe for PAN SEARING tuna.

To GRILL tuna, I use Alton Brown's method (from his T.V. show, GOOD EATS) and fire up a charcoal starter chimney full of charcoal until it is well beyond ashed over, and exhibits burning hot coals down in the middle. I then knock off all the ash by slamming the thing down several times in an empty barbecue, until there is nothing left but burning red hot embers. I put an old grate from a hibachi on top, spray some oil on the fish and plunk it down right in the middle of the chimney-top grate. It's like cooking over a jet engine! ALL of the heat is funneled directly up toward the fish, which chars in only a minute or two per side.

When all the sides are cooked I let it rest for a couple of minutes and then slice and serve. The deeply grilled exterior is the perfect counterbalance to the pink (almost red) and tender interior.

You want a really hot pan, so you can sear the outside and still have the inside pink. Stainless steel is preferred, but non-stick aluminum will work. If you cook the fish all the way through, it will be tough (like it is in the can). When it's still pink inside, it comes out tender and juicy, like a filet mignon steak. Use about 2 tablespoons of oil on medium high heat. You can season the fish first, but just know that things like pepper can become excessively bitter if they get burned. Place the fish in the pan. It should immediately begin to sizzle. Keeping the pan on the burner, swish the pan around a bit to make sure the fish can slide around. Then let it sit and cook for about 3 minutes.



Turn the fish over. It should be seared on the one side (browned). Do the swishing thing again and again let it sit for about 3 minutes. Pull the fish out of the pan and set them on a plate to rest. Place a piece of foil over them loosely to keep the heat in. Let this rest for about 5 minutes before serving. Also, if you didn't season with anything more than salt before, you can now put on some pepper, garlic, dill, etc., and serve with a lemon wedge if you like that.
