I am making stuffed chicken for new years. my stuffing recipe contains: dried plums, red peppers, 1 egg, ground chicken and pork meat, parleys and garlic.
I was thinking about a plum sauce. I read something like fresh plums and white wine sauce... any ideas???

I would simply deglaze the roasting pan with the white wine of your choice and add the plum - fresh and chopped up with a bit of butter to enrich the sauce - very simple and it would enhance the flavor of your chicken and stuffing instead of distract from it.

I think plum sauce is a great idea.
Plum Sauce
1 (17 oz) can purple plums
1 ea medium onion, chopped
2 tbsp butter or margarine
6 oz can frozen lemonade concentrate
1/4 cup chili sauce
1/4 cup soy sauce
1 tsp Worcestershire sauce
2 tsp prepared mustard
1 tsp ground ginger
2 drops Tabasco sauce
Puree plums. Combine pureed plums, their juice and remaining ingredients. Simmer, uncovered, for 15 minutes. Refrigerate.

I think the plums and white wine could taste good. Maybe even a citrus-based sauce with a sweet white wine involving oranges or grapefruits (ruby red).
OR even a sweet white (reisling, etc) or red (like port or madeira) with pear or apple.
In any case, I would go sweet and light.
