I love a well made Ratatouille. The best recipe I've found comes from the Joy of Cooking cook book:



Ingredients

1/4 cup olive oil

1 medium eggplant , peeled and cut into 1-inch cubes (1 lb)

1 lb zucchini , cut into 1-inch cubes

2 tablespoons olive oil

1 1/2 cups onions , sliced

2 large red bell peppers , cut into 1-inch squares

3 garlic cloves , chopped

salt & fresh ground pepper , to taste

1 1/2 cups fresh tomatoes , chopped seeded peeled

2-3 sprigs fresh thyme

1 bay leaf

1/4 cup fresh basil , chopped

Directions

1Saute in a large skillet or Dutch oven over high heat until the vegetables are golden and just tender, 10 to 12 minutes: 1/4 C olive oil, eggplant and zucchini.

2Remove the vegetables and reduce the heat to medium-high. In the same pan, cook until the onions are slightly softened: 2 T of olive oil and onions.

3Add and cook, stirring occasionally, until the vegetables are just tender but not browned, 8 to 12 minutes: red pepper and garlic.

4Season with salt and pepper to taste.

5Add: tomatoes, thyme and bay leaf.

6Reduce heat to low, cover, and cook 5 minutes.

7Add the eggplant and zucchini and cook until everything is tender, about 20 minutes more.

Taste and adjust the seasonings.

Stir in: basil.

I found a very interesting ratatouille recipe in the newspaper inspired by the movie of the same name... Wish I could find it on the net but it's as visually appealing as it is tasty.

Ratatouille is a dish, not a variety of food, one special dish.

About 2 tablespoons of pine nuts

4 tablespoons of olive oil

1 medium-size onion, chopped

3 large clovers garlic, minced or pressed

1 teaspoon thyme leaves

1 small eggplant (about 3/4 lb.) unpeeled, cut into 1/2-inch cubes

1 large green or red bell pepper, seeded and chopped

2 cups spinach leaves

3 large tomatoes (about 1 lb. total), chopped

1/4 cup minced parsley

salt and pepper

fresh basil

lemon wedges or grated lemon peel



Place pine nuts in a pan over medium heat. Cook, stirring, until lightly browned (about 5 minutes).

Heat 2 tablespoons of the oil in a wide frying pan over medium heat. Add onion and garlic, and cook, stirring, until onion is soft (about 3 minutes). Stir in remaining 2 tablespoons of oil, thyme, eggplant, and green pepper, and continue cooking. stirring occasionally, for 5 more minutes. Add zucchini, spinach, tomatoes, and parsley. Reduce heat and simmer, uncovered, stirring occasionally, until vegetables are tender (about 30 minutes). Season with salt and pepper to taste.

Serve hot or room temperature. Garnish with basil and pine nuts and pass lemon wedges at the table. Makes about 4 cups.

how strange ive just defrosted some for tonights tea!! i fry onions garlic aubergine mixed peppers and courgette in olive oil until almost cooked then i cheat and add tinned tomatoes because they have more liquid and i add a lttle drop of red wine for flavour,simmer together and add a sprinkle of herbs!!easy peasy the hardest thing is all the chopping!!
