I put all my ingredients in the crock pot for tonight's dinner. I am making beef stew. Well It has been cooking for an hour now & I just realized I used vegetable broth instead of beef broth.... MEH! Did I just ruin dinner? How can I make the vegetable broth thicker for the stew.

Do it the way you would thicken the beef broth, they're both broth. If it would make you feel better, you could add an instant beef bullion cube or two. The veggie broth will just make it tastier.=]

No, you have not ruined dinner. I have used vegetable broth, beef broth, and even chicken broth in beef stew and really could not tell much difference. If you want to thicken up the juices, mix 2 tablespoons of flour in a cup of water. Put this in a jar and shake well, and shake it vigorously, so that the flour gets completely mixed into the water. Make sure the lid is on tight! Pour that flour/water mixture into the crock pot, stirring and mixing this mixture into the juices the entire time. It will thicken up as it cooks. You can also use corn starch if you don't have flour, but only use 1 tablespoon of corn starch.
Happiest in the kitchen.

It will be just fine. Veggie broth wil thicken just like beef broth will.

You need to adds something to thicken Any kind of broth. I like to dredge my meat in a seasoned flour then pan fry, you are basically making your own roux.

If you are really, really worried about it, then throw a beef boullion cube in there with everything. I have made the same mistake you have before and that made it taste great.

It should be fine... if you want to thicken it you could add a spoonful of tomato puree/concentrate - it will give it a nice rich taste too... good luck.
