Where can I find good recipes for a diabetic's diet?

We just found out that my mother has diabetes and the doctor is suggesting a minimal carbohydrate and sugar (obviously) diet. Unfortunately, I use a generous amount of rice, pasta, and breads in my usual recipes.

Are there any Stand-Out websites or cookbooks with diabetes-minded recipes?

Google. There are TONS of recipes out there.



As for pasta, try brown rice pasta. It's got a low glycemic index and it tastes sweet and nutty. It's a better substitute than whole grain pasta because the texture is pretty much the same as white flour. Just be careful when cooking it because it can boil over easier than regular pasta, and it needs to be rinsed well when done.



Stay away from foods that are packaged, processed, pickled, frozen, canned, cured, etc. If it's not fresh food, she should stay away from it. Diabetics need to protect their kidneys and that includes salt as well.



She really can have the same diet as you, but portion control will be the key and so will fresh fruits and veggies. So it eating regularly so instead of having an entire sandwich (as an example) for lunch, have her eat half at noon with a small piece of fruit and the other half at 2 pm.



I highly recommend a diabetic dietitian, they'll be a great help. They will work with her to try and accommodate her likes and dislikes and help you to come up with a good diet plan that the entire family can enjoy.

What you eat is not actually the cause of diabetes, but how you live can be. If you sit on the couch all day, your chances of developing diabetes goes up greatly.



Just do the best you can to not gain weight and to maintain an active life style and that will greatly help reduce some of your risks.

1.Black Beans and Rice "The perfect meal! Preparation Time: 20 minutes.



Original recipe makes 10 servings/serving size: 1/2 cup Change Servings

1 teaspoon olive oil

1 onion, chopped

2 cloves garlic, minced

3/4 cup uncooked white rice

1 1/2 cups low sodium, low fat vegetable broth

1 teaspoon ground cumin

1/4 teaspoon cayenne pepper

3 1/2 cups canned black beans, drained



Directions

1.In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.



2.Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.

I don't remember what books my aunt and mother used (it was many years ago), but I know our local libraries have quite a few cookbooks and lifestyle books specifically for Diabetics and those who just need to watch their blood sugar.



I would just check out the library and see what they have. There's no shortage of resources out there.
