London Cheese Cakes

The London Cheese Cake is a delicious cake that is found mainly in bakeries in London, England. It is totally unique and should not be confused with the other type of cheesecake. Why they are called cheese cakes is a bit of a mystery as they don't actually appear to use cheese in them but it's probably because that the shredded coconut resembles grated cheese. They have a base of flaky pastry topped with icing that's full of coconut shreds. Sometimes there will be sweet strawberry or raspberry jam filling.Without a doubt these cakes are of England's finest cakes. However, they are yet to be mass produced by a large bakery and for that reason are confined to local bakeries in London where the family recipe has often been handed down and perfected through the generations. Another London Cheese Cake, guvnor!? Lovely jubbly!

How to make a London Cheesecake – thanks Mike

Buy a packet of ready rolled puff pastry and cut out disks 9 cm diameter (or squares if you don’t want to be a purist) and place on a baking tray.

Make indentations in the centre and place a nice drop of jam in the middle of each one.

Add a blob of frangipane mix (equal amounts of egg, sugar, butter and ground almonds) or just plain cake mix (as used for fairy cakes) – about the size of a large walnut.

Rest for 30 minutes while oven heats up.

Bake at 200c /400f for about 15 minutes until nicely done.

When cool spread fondant icing or thick water icing on top and dip into thread coconut.

Eat them

London Cheesecakes

(Makes 6)

1 pack of ready to roll puff pastry

120g Raspberry jam (try and make it the best quality you can)

Fondant Icing (Icing sugar+water)

Shredded Coconut (desiccated will not do!)

1. Roll out your pastry and mark out 12 squares with a knife. On my sheet of pastry I marked out 4 along the width and 3 deep.

2. Put a spoonful of raspberry jam in the middle of a pastry square. I put a rather large tablespoon full when I was making mine but I think I got carried away and in hindsight it could have been less! I'd say about 15g would be a good amount but just eyeball it and see what you think.

3. Cover with a piece of pastry and seal around the edges using your finger to press the two pieces of pastry together.

4. Bake your 6 jam filled puff pastry squares for approx. 20 minutes at 200°C.

5. Allow them to cool, and whilst doing this whip up your fondant icing. I can't tell you amounts...I made these in a hurry but you want it to be quite thick (so it doesn't run) so only add a few drops of water at a time.

6. Finish with a more than generous sprinkling of shredded coconut - in my opinion this makes the whole treat!

This is the best cheesecake recipe I've ever found, and I spent about 5 years experimenting! Feel free to add mini chocolate chips, and drizzle with caramel sauce! It's not totally necessary, but I find I get better results, when I wrap the outside of the pan with 2 layers of heavy duty foil, and put the cheesecake in a roasting pan with water around it (hot water bath). It makes the cheesecake cook more evenly without any cracking. Cheesecake INGREDIENTS: 1 1/2 cups graham cracker crumbs 1/2 cup white sugar 1/4 cup butter, melted 5 (8 ounce) packages cream cheese, softened 5 eggs 2 egg yolks 1 3/4 cups white sugar 1/8 cup all-purpose flour 1/4 cup heavy whipping cream DIRECTIONS: 1. Preheat oven to 400 degrees F (200 degrees C). 2. Mix the graham cracker crumbs, 1/2 cup of the white sugar, and the melted butter together. Press mixture into the bottom of one 9 or 10 inch springform pan. 3. In a large bowl, combine cream cheese, eggs and egg yolks; mix until smooth. Add the remaining 1 3/4 cups white sugar, the flour and the heavy cream. Blend until smooth. Pour batter into prepared pan. 4. Bake at 400 degrees F (200 degrees C) for 10 minutes, then turn oven temperature down to 300 degrees F (100 degrees C) and continue baking for 1 hour, or until filling is set. Let cheesecake cool, then refrigerate.

English Cheesecake

Beat cheese and sugar smooth. Beat in yolks to blend. Blend in sour cream, vanilla and lemon. Beat whites stiff not dry. Fold into mixture. Pour into crumb lined springform pan. Bake at 300° for 1 hour. Keep in oven 1 hour with door closed. Open oven door, and keep cake in 1/2 hour longer. Remove and chill overnight. A light fluffy cheesecake.

Vanessa, if we knew the ingredients we could tell you. Usually all that is done, is the ingredients to a standard cheesecake are altered to give it a specific name.
