I have been doing this one for years.

Take your usual minced beef, mix it with a beaten egg and some chopped onions (I grate my onions sometimes as they mix better) Then add a packet of dried stuffing mix of your choice, it doesnt need to be rehydrated first, just add from the packet. It will help bind the meat together and it adds much more flavour than plain breadcrumbs.

Holy complicated burger recipes. Just make a patty, sprinkle with kosher salt and fresh ground black pepper. Grill or sear to desired doneness. I use a cast iron skillet, brown on both sides, then toss the whole thing into a hot oven. Let the burger rest at room temperature, as with all cooked meats, for a few minutes before eating. Dress the burger however you like. I like caremelized onions. Enjoy.

Ingredients

1 1/2 pounds ground lamb

3/4 tsp Mediterranean Oregano Leaves

1/2 tsp Thyme Leaves

1/4 tsp Ground Cayenne Red Pepper

2 tsp Fennel Seed

1 tbsp Parsley Flakes

3/4 tsp Paprika

1/4 tsp Coarse Grind Black Pepper

2 tsp Coriander Seed

4 shallots, finely diced

1 tbsp olive oil

1 tsp salt

Cumin Yogurt:

1/4 tsp Cumin Seed

1/2 cup yogurt, plain

1 pinch Coarse Grind Black Pepper

1/8 tsp salt



Directions

In a preheated, dry skillet, toast the fennel and coriander seeds over a medium heat for around 30 seconds, or until the seeds disperse an aroma. Remove from skillet then crush the seeds in small bowl, or with a mortar and pestle. In the same skillet, saute the shallots in olive oil until they become translucent and just starting to release an aroma. Add in the oregano and thyme, then remove immediately from the heat and place aside.

Mix together the lamb, remaining spices, and salt in a medium-sized bowl. Combine gently, then create 6 patties.

In a preheated, dry skillet, toast the cumin seeds, over medium heat, for about 30 seconds (or until aromatic.) Remove them from the skillet, anc crush as you did with the fennel and coriander seeds. Combine the yogurt with the toasted cumin, salt and pepper then place aside.

Over a medium heat, grill the burgers to your desired doneness. Then, serve with grilled sourdough bread or hamburger buns and top with cumin yogurt.

PREPARATION

Peel and finely chop the onion

Chop the sun dried tomatoes

Cut the rolls in half and lightly toast the cut side



Method



Mix all the main ingredients in a bowl. By far the best way to do this is with your hands.

Divide the mixture into four and form each into a burger shape. Pat them well to prevent them falling apart when cooked. Ideally, put them in the fridge for an hour before cooking but this is not essential.





Preheat the grill to medium / hot. These burgers are also great for barbecue cooking.

Grill for around 5 to 8 minutes on each side depending on how well done you like your beef.



Turn the grill up to high two minutes before the beef burgers are cooked, add a slice of cheese topped with a very light dusting of cayenne pepper onto the burgers. Put them back under the grill for the remaining two minutes. Mix the tomato ketchup and mustard well, and top each burger with a teaspoon of the mixture.

Finally, top the burger with a slice of lettuce, and place it in the cut roll. Eat immediately. Salad or a serving of baked beans are great accompaniments

I dont have a specific recipe, but I usually add a good dollop of mustard to the mixture - it adds a bit more flavour and helps to bind it!

Preheat an outdoor grill for medium-high heat. When grill is hot, lightly oil the grate.

In a large bowl, mix together the ground beef, tuna, onion, and relish. Season with seasoning salt and pepper to your liking. Form the meat mixture into 6 patties.

Place patties on the hot grill, and cook for 6 to 9 minutes on each side, or until cooked through. Serve on buns with the usual toppings.



note:

If you have the time to wait, this is best if let set for an hour or more before cooking.
