The cheese in the lasagna that you are talking about is called ricotta. It is super easy to find. It is similar to cream cheese and cottage cheese in texture, but tastes slightly richer than mozzarella. The types of cheeses in Olive Garden's four cheese ravioli are ricotta, parmesan, mozzarella, and romano.
