hey i am from south east asia (to be more specific Malaysia)..



basically rice is one of our common food or specialty. for myself, i have to eat rice at least once or twice a week. it is very common to eat rice everyday over here.



hope this help:

-for every cup of rice the ratio is 1 and half cup of water



fried rice recipe (2 servings):



rice preparation;



2 cup of rice

3 cup of water



-rinse the rice before putting the water.

-if you have a rice cooker you can just put the rice and water to be cook

and forget about them but if you are using normal pot on stove, make sure you keep stirring and try to avoid the bottom from being over cook.

-for best texture of fried rice, just leave the rice to kool down on its own. i don't suggest you put it in the fridge because that will make it sticky when you fry the rice.



frying preparation:



1 big red onions (blend or cut finely)

1 clove of garlic (blend or cut finely)

some meat (any that suits your taste i.e:mince beef or chicken, sausages finely sliced, chicken or beef finely sliced)

some mushrooms (i.e: button mushroom or oyster mushroom) sliced

blended chili ( red chili, dried chili, or small green chili) 1 to 2 table spoon

salt



-fry the onion and garlic till the smells comes out and they get golden-ish

-put in mushrooms

-put in the meat

- once they are cook put the chili in, fry till cook

-put salt in and mix well

-put the rice in and mix well

-keep mixing till everything is spread up well if its too dry add a little bit of water to help the mixing or getting burn



you can garnish with Chinese parsley, cilantro, green onion, thin sliced omelette.

OK. Here is a wonderfully easy fried rice recipe. Have a day old cooked rice, that's been stored in the fridge. Fried rice is not as nice with freshly cooked rice. The rice needs to be a little dried out. Cook this in a large roomy fry pan . I use an electric fry pan. Fry onions till softened. Add diced chinese pork sausage. It is this sausage that makes the special fried rice taste yummy. Add some diced ham and diced chicken. Add the cooked rice. Add salt, pepper and soy sauce. Stir thoroughly to combine the sauce with all the rice and ingredients. Move the rice to the side of the fry pan. Pour into the center of the frypan beaten eggs. Leave it to firm up. Don't scramble it till it has set. What you want is big bits of yellow eggy bits through your rice. If you break it up too early, all you'll have are tiny bits of not recognisable egg. So, leave it. Only when it's set, then break it gently and combine with the rest of the rice. Add frozen peas. Stir through. That's it! You have a wonderful, tasty easy fried rice.

Rice should be cooked in a 2 to 1 ratio of water to rice and make sure to use a pot with a tight lid. Bring the water to a boil before you add the rice. Return to a boil then reduce the heat and cover tightly for 20 minutes.



After cooking, fluff the rice and let it sit without the cover for 20 minutes to allow it to dry even more.



Now you can use it for fried rice.

This is the only fried rice I eat. It's not a traditional fried recipe, but I like it better myself.



Thai Fried Rice

Recipe courtesy of the Whole Life Nutrition Cookbook



Ingredients

• 2 cups brown jasmine rice

• 3 ½ cups water

• Pinch sea salt



• 1 tbsp virgin coconut oil (or olive oil)

• 1 bunch green onions, sliced diagonally ½ inch thick

• ½ cup raw cashews

• 5 cloves garlic, crushed

• ¼ tsp white pepper (or black if presentation not important)

• ¼ cup raisins

• 1 medium firm tomato, diced

• 1 tbsp whole cane sugar, agave nectar, or granulated sugar (whatever you have)

• 1-2 tbsp tamari or light soy sauce

• ½ cup chopped cilantro



Place rice, water, and salt into a medium pot with a tight-fitting lid. Bring to a boil, then turn heat to a low simmer and cook for about 40 minutes or until done. Remove from heat and let stand at least 20 minutes.



In a large skillet, preferably cast iron, heat coconut oil over medium heat, then add green onions and cashews, cook a minute or two or until the cashews are lightly toasted, stirring frequently. Add crushed garlic and white pepper and continue stirring. Add raisins and stir to coat with oil.



Add cooked rice and continue stirring. Add more oil if needed. Add chopped tomato, sugar, and tamari, cook a few minutes more while stirring. Take off heat and add chopped tomato.

Benihana's Fried Rice

1 c Uncooked rice

5 T Butter

1 c Chopped onion

1 c Chopped carrots

2/3 c Chopped scallions

3 T Sesame seeds

5 Eggs

5 T Soy sauce

Salt

Pepper

Cook rice according to package directions. In a large skillet melt butter.

Add onions, carrots and scallions. Saute until carrots are translucent.

Set aside. Heat oven to 350 degrees. Place sesame seeds in a shallow pan.

Bake until golden brown (10 to 15 minutes), shaking pan occasionally for

even color. Lightly grease another skillet. Beat eggs. Pour into hot

skillet. Cook as you would scrambled eggs. Combine rice, vegetables,

sesame seeds and eggs. Add soy sauce. Stir. Salt and pepper to taste.

When making rice make sure the water/broth covers the rice at least 1 inch over the rice. Also place foil to cover and then a top. Do not open until done. About 20 minutes.

Americanized Chinese Fried Rice



1 cup jasmine rice

3 Tbsp. soy sauce

2 cups water

1/4 tsp. chopped parsley

3 strips bacon

4 eggs

1 tsp. milk

dash of black pepper

1/4 cup frozen peas

dash of sesame seeds



Boil water, soy sauce and parsley in a saucepan. Add rice and cover. Lower temperature and let simmer until water is completely absorbed. Put saucepan with rice in the refrigerator while preparing the eggs and bacon.

Crack eggs into a small bowl. Add milk and pepper. Stir together with a fork.

Heat large frying pan. Chop bacon in small bits and add to the pan. Cook until done, but not crispy. Add the egg mixture. Stir constantly until the egg is completely cooked into small pieces.

Remove the rice from the refrigerator and add it to the eggs and bacon. Stir together until rice is hot. Add peas and stir until peas are hot.

Remove rice mixture from pan and put in serving dish. Sprinkle sesame seeds on top.

I cook my rice the same as my spaghetti, boil and drain, then for fried rice refrigerate it til cold before frying.

Pre-cook it the day before, or well in advance, so that it has plenty of time to dry.

That is the best tip I can give you.
