I bought a whole chicken, and I cut it up, and it has the giblets (the internal organs of a chicken). What can I do with these? Is it ok to cook them with the other parts of the chicken? Or do I need to cook them seperately? I've had chicken livers and gizzards at a fast food chicken place, and they weren't bad. So I'm assuming that these may be like that. Anything I need to know? What's the best way to cook them? Can I just fry them up?

Giblet Gravy

2 tbsp. fat from roasting chicken

2 tbsp. flour

1 c. cold water (or more)

Chicken giblets, cooked & finely chopped

Salt & pepper to taste

Gravy should be made in the pan in which chicken was roasted. If there are more than 2 tablespoons fat in the pan, add a little more flour or drain off excess fat. If there is not as much as 2 tablespoons fat, add a little melted butter. Add flour; stir to mix thoroughly. Add water and giblets; cook over medium heat, stirring constantly until gravy boils.

If too thick, add a little more water. Boil for 2-3 minutes, stirring and rubbing the spoon over the brown residue that has baked onto the pan. This will gradually dissolve and color and flavor the gravy. Season with salt and pepper.

The best way I like chicken giblets is to shake them in a ziploc back with some flour and black pepper. Place just enough oil in a skillet to cover the bottom of the skillet. Heat it and add the floured giblets and brown on all sides. Place in a preheated 350 degree oven for 15 minutes and they will be done perfectly.

Hope that helps.

I usually add the giblets of chickens or turkeys in a pot of water with onion, celery, a couple of pepper corns and a touch of salt simmered to make stock. I only like the liver and it's my treat after the stock is cooked and strained. The dogs get the rest of the meats.

Or if you're roasting the bird, you can put the giblets in the pan with the rest of the pieces and roast them
