Question:
Anyone know how to make the "Creamed Spinach" side dish they serve with steak at Applebee's?

It's part of their "Pick Three" deal with steak and two sides. It's one of the side options. It's the best spinach I've ever had at a chain restaurant. Note: I am not asking about the spinach artichoke dip. It's a side dish called "Creamed Spinach." I think it's fairly new. I think it has cheese in it.

I went to applebees tonight and got lucky. they make it with fresh baby spinach, alfredo sauce and parmesan cheese. they didn't give me quantities, but for someone that cooks alot like I do, you can usually figure out about what you need.

I just tried it for the first time last week and it is awesome! I found your question because I was looking for the recipe myself. It is made with fresh spinach. I don't think it had any spice sprinkled over the top of it; mine didn't seem to have it, perhaps a bit of nutmeg in the sauce is the herb that people are thinking of. And it wasn't baked in the oven; a great creamed spinach can be done directly over the stovetop. I would guess that the sauce was done with whipping cream, butter, parmesan cheese, and some herb. Also, the sauce must be made first, then the leaves are dropped in for just a couple of moments; otherwise, the leaves would be more wilted.

Know one has a replica of this on the internet, since it is a NEW item. You will get recipes for other Creamed Spinach that will probably not taste like Applebee's.

I just had it today, and went looking online for the recipe as well. I disagree with the recipes that were posted as answers for this question though - Applebee's did not use frozen chopped spinach. It was definitely whole spinach and I doubt it was frozen. Yes, it was delicious. Good luck finding the recipe. Sorry I couldn't help.

I just had it for the first time last night, and it is fabulous. I definitely agree it wasn't made with cooked spinach, and has coarsely grated cheese in it. Additionally, it has some Italian spice sprinkled over the top--predominately oregano. My somewhat educated guess is that it is fresh spinach, mixed with a cooled well-seasoned Mornay sauce (but not overloaded), sprinkled with Italian spices and additional cheese, and baked for a short time in a very hot oven. I have designed my own version of the recipe, and intend to make it tonight. Will report back tomorrow on the results.

~~~CREAMED SPINACH



3 tbsp. butter

4 tbsp. flour

1 1/4 tsp. salt

1 c. whole milk

1/2 c. sour cream - can be low-fat

2 tbsp. butter

2 tbsp. onion, minced

1/4 c. water

20 oz. frozen spinach, chopped

1/4 c. Parmesan cheese



Melt 3 Tbsp. butter in a small saucepan on Med-Low heat. Stir in flour and salt until creamed together. Stir in milk a little at a time. Increase the heat to Medium. Constantly stir with a whisk until mixture is thick and smooth.

Remove from heat and set aside.



Melt 2 Tbsp. butter in a 2 quart saucepan over Medium heat, add onions and cook until transparent. Add spinach and water to pan, lower the heat and cover. Stir several times until spinach is almost completely cooked.



When spinach is almost done, add white sauce, sour cream and Parmesan cheese. Stir well and simmer until completely blended.

****CREAMED SPINACH



1 pkg. frozen chopped spinach

1 tbsp. butter

1/2 tsp. salt

1/4 tsp. onion powder

1 tbsp. flour

1/2 c. sour cream or sour Half & Half



Partially thaw spinach. Add to melted butter in heavy skillet. Add seasonings. Cook overed over high heat a minute or two; reduce heat and cook 5 minutes longer, breaking spinach up with fork to hasten thawing. Sprinkle flour over spinach, blend; add sour cream, blend again; and cook over low heat about 2 minutes.
