Best Healthy Cookbook for Beginners?

I am in my second year of university and about to start my winter semester. I have never really cooked much in my life, first year in university I was on a meal plan and last semester I got by but on easy to make stuff that wasn't really that healthy. This semester I would like to be able to cook my own healthy meals. Does anyone have a good recommendation for a cookbook for a beginner such as myself with healthy meals in it. I would say I am a bit under weight for my age so healthy meals that could gain me a few pounds in a good way would be awesome! Thanks in advance

Same question, same answer: Read "Joy of Cooking" cover to cover. It will teach you HOW to cook, WHAT to cook and what most basic kitchen things and foods are about. It was written long, long ago with that very purpose in mind - to teach beginners how to cook good, simple foods. It's been reprinted many times because it's so good at it.

I can't recommend a cookbook off the top of my head, but I can steer you toward some useful places online. I think the best way to get into healthy eating is just to arm yourself with some basic knowledge about nutrition. I never let a week go by by without listening to "Nutrition Diva" Monica Reinagel's great podcast. My favorite place to find recipes online are Allrecipes and Food Network.com, though the recipes there are not necessarily healthy. I find, though, with a basic knowledge of healthy food, you can improve the healthiness of most any recipe.

Rachael Ray has several that use few ingredients and also use ingredients already cooked. Before you buy a cook book, go to a book store and look and the instructions; when I first moved out and didn't know how to cook, I mistakenly bought a cook book that said : cook until done ( clues !! I needed clues !! 5 minutes or an hour and a half? ).
