Dessert Suggestions for a Party?

Question

My work is having their Christmas party next Monday (I work at a bar, we do the employee party after the Holidays). To save money they are providing the main course; my branch of the bar has to bring desserts. I'm not a cook, I am not good at baking. Does anyone have any suggestions of desserts that are easy to make and AREN'T the standard cookies/cakes/cupcakes/pies?

I have a really easy one for you. Buy a Sara Lee frozen pound cake and cut it lengthwise into 3rds. Spread each 3rd with lemon curd (found with jams, jellies and preserves). Now, top the lemon curd with strawberry (or raspberry, whatever you like) and put your cake back together in its original aluminum pan. When ready, slice (as a slice of bread) to see a beautifully layered cake. Top with whip cream or ice cream. Delicious!

Since you are not good at baking, this simple cheesecake recipe is perfect for a party and super easy to make.



No Bake Chocolate Cheesecake

1 1/2 cups dark or semisweet chocolate chips

1/2 cup granulated sugar

11 ounces cream cheese

1/4 cup butter, softened

1 chocolate or regular graham cracker crust

2 cups frozen whipped topping

Whipped topping and shaved dark chocolate for garnish



Melt chocolate chips over low heat in medium saucepan, stirring frequently until smooth and melted. Set aside to cool. In large mixing bowl beat cream cheese, sugar and butter until smooth. On low speed blend in the melted chocolate and then fold in whipped topping until blended. Cover and chill until firm, about 3 hours.

Ingredients for Red Velvet Crust:



•1 box Red Velvet Cake Mix (or white cake mix with red food coloring), prepared according to box directions.

What’s Next on That Crust:



Pour 1/2 of cake mix into a greased 9-inch springform pan and bake according to the directions on the box for a 9-inch layer cake. Discard extra batter.



Allow cake layer to cool completely in the pan. Set aside.



Ingredients for Cheesecake:



•16 ounces cream cheese, room temperature

•1/2 cup sugar

•1 tsp vanilla extract

•1/4 tsp almond extract

•2 large eggs

•1/4 cup sour cream

•Food coloring

What’s Next on That Cheesecake:



Go ahead & preheat your oven to 325 F or 162 C.



In a large bowl- beat cream cheese, sugar, vanilla and almond extract until smooth. Beat in eggs one at a time, then add in sour cream.



Divide mixture into 5 small bowls and add the following colors to each one: pink, yellow, blue, green and purple. Pour batters onto cake base in the 9-inch springform pan. Do not swirl too much, so the colors will be clearly visible.



Bake for 35 minutes, until the center is just about set when you jiggle the pan.



Allow to cool completely and refrigerate before serving.



Run a knife the cake to release it before removing sides of pan!

I have a couple of very easy desserrts for you to choose from:



Basic no-bake cheese cake:



1 grahm cracker crust home made or store bought. Sorry when I make it I don't measure anything out, and I also like to bake mine for about 10 min in a 350 degree oven so it is nice and crisp.



So bake the crsut and set aside to cool.



Then all you need is:



1 package cream cheese-softened

1 large tub cool whip

1 tsp vanilla



Beat the cream cheese well. Then gently fold in 1/2 the whipped cream. Pour into the pie shell and rfirdgerate.



Top with more cool whip before serving.



Now the above is very very basic but you could change it up in so many ways. Here are a few ideas.



Mix in to the cream cheese:



1/4 cup peanut butter

Choc syrup

conecrated fruit juice or drink mixes-Un-diluted

Jams

Crushed/chopped candy bars

crushed peppermint candies

melted candy bars or choc chips

small chopped fresh or canned fruit



Toppings:



more whippe cream

choc, caramel or strawberry sauce

pie fillings

make a glaze of meted down jams/preserves

choppped nuts

lemon, lime or orange "twists"-okay that's more of a garnish

Carmel Chcolate chex Mix bars: ***I've changed this from the original



4 cups popped light butter-flavor microwave popcorn-or kettle corn

2 cups Chex

2 cups Cocoa Puffs

1 packet hot choc mix

1 cup pretzel sticks, coarsely broken

1/2 cup sugar

2 tbsp dark corn syrup

1/2 cup light corn syrup

1/3 cup butter or margarine

1/4 cup buttescotch chips



MICROWAVE:



1. Butter bottom and sides 13x9-inch pan. Remove and discard unpopped kernels from popped popcorn. In large bowl, mix popcorn, cereal and pretzels, and hot choc mix. Toss well to coat wit the choc mix; set aside.



In 2-quart microwavable measuring cup, microwave brown sugar, corn syrup and butter uncovered on High about 2 minutes or until boiling, stirring after 1 minute. Pour over cereal mixture in bowl, stirring until evenly coated. Press firmly in pan. In small microwavable bowl, microwave butterscotch chips uncovered 30 to 60 seconds or until chips can be stirred smooth. Drizzle over bars. Cool completely, about 30 minutes. Cut into 8 rows by 4 rows.



STOVE TOP:

2. In 1-quart saucepan, heat brown sugar, corn syrup and butter to boiling over medium heat, stirring occasionally. Boil 1 minute; remove from heat.

4. In small microwavable bowl, microwave butterscotch chips uncovered on High 30 seconds to 1 minute or until chips can be stirred smooth. Drizzle over bars. Cool completely, about 30 minutes.



For bars, cut into 8 rows by 4 rows.

Berry Topped Pudding Pie in a Meringue Crust:



2 lg egg whites

½ tsp vanilla ( or butter nut flavor)

1/8 tsp cream of tarter

1/8 tsp salt

½ cup sugar

¾ cup pecans finely chopped and toasted-then cooled

1 small pkg fat free, sugar free vanilla, French vanilla, or lemon pudding mix (prepared as directed)

12 oz fresh berries or other fruit sliced

½ cup whipped cream



Preheat the oven to 300.



Spray an 8 or 9 in pie plate with pam.

In a large mixing bowl using an electric mixer beat the egg whites, vanilla, cream of tarter, and salt on medium speed until foamy. With mixer still running gradually add the sugar in a slow steady stream until stiff peaks form. Very gently fold in ½ cup of the nuts. Spread the meringue all around the pie plate (on the sides as well). Sprinkle with remaining nuts.



Bake for 50 min or until the meringue is firm and lightly browned. Let cool on a cooling rack at least 2 hours.



Add the pudding mix and refrigerate for at least one hour. Arrange fruit nicely across the top and serve with a dollop of whipped cream.

Grape Salad, this is a mix between a dessert and a "salad" type dish, but I consider it dessert.

Wash and destem:

2 pounds of green seedless grapes

2 pounds of red seedless grapes



Cream together:



8 oz. sour cream

8 oz. Philadelphia Cream Cheese

1 cup white granulated sugar

After thoroughly mixed, add the grapes.



Topping:Crush 4 small Butterfinger candy bars (equal to 1/2 cup)

1/2 cup brown sugar

1/2 cup nuts



Sprinkle mixture over top of grapes. Make salad and refrigerate a day ahead.
