Question:
Lost page from Joy of Cooking: Pumpkin pie recipe?

My niece REALLY wants me to make my famous pumpkin pudding for Thanksgiving. It's actually the pie filling from the pumpkin pie recipe that was in the edition of Joy of Cooking sold in the late 1980s. (I think it was bought for me in about 1987, when I went to graduate school.) Well, I looked in my cookbook today so I could buy my ingredients, and apparently I've turned to that page so many times, it fell out! Darn plastic spiral binding!

Does anyone have that edition of Joy of Cooking so you can transcribe the recipe for me? It's different from most recipes in that it has you bake the pie shell empty and cook the pudding separately, instead of baking them together. I just don't make the crust, and serve it as pudding.

Please help! Thanksgiving traditions must be maintained.

I though I had this cookbook but I guess not *tear tear* but i have Towers of Heavenly Recipes and this book was published in 1996 but these are GREAT recipes trust me. There's Pumpkin Pie Cake created by Norma Schmeidler

ingredients:

1 (29 ounce) can Pumpkin

4 eggs

1 (13 ounce) can evaporated Milk

1-1/2 cup sugar

2 teaspoons cinnamon

1 teaspoon ginger

1/2 teaspon nutmeg

1 package yellow Cake Mix

1 Cup oleo, melted

1 cup choopped nuts

P.S. if you dont have these ingredients just use other materials close to them!

Process-

Mix the first 7 ingredients and put in an ungreased 9 x 13 inch cake pan. Sprinkle dry cake mix over mixture. Pour oleo over cake mix and sprinkle with nuts. Bake in 350 degree over for 1 hour. Top with whipped cream or Cool Whip.

These are very old recipes.
