Can you have soymilk? If so, crepes are just like swedish pancakes. Here are some recipes for vegan crepes:
Vegan Crepes
yield:16 crepes (6 inch diameter)
Ingredients
1/2 cup soymilk
1/2 cup water
1/4 cup melted margarine
1 tablespoon turbinado sugar or white sugar
2 tablespoons maple syrup
1 cup unbleached all-purpose flour
1/4 teaspoon salt
Directions
1In a large mixing bowl, blend soy milk, water, margarine, sugar, syrup, flour, and salt.
2Cover and chill the mixture for 2 hours.
3Heat a 5-6" skillet over medium heat and lightly grease it.
4Pour approximately 3 tablespoons batter into the skillet.
5Swirl to make the batter cover the skillet's bottom.
6(You may have to thin the batter out with a bit of water if it doesn't spread out easily).
7Cook until golden, flip and cook on opposite side.
8(The crepes are very delicate and a bit hard to flip.. one option if you have trouble with this is to spread them out really thinly and not flip them at all).
Vegan Crepes II
Ingredients:
1/2 cup flour
1/2 cup whole wheat pastry flour
1/4 cup soy flour
1/2 tsp baking powder
1/2 tsp salt
3 cups soy milk
Preparation:
Mix the dry ingredients and make a well in the middle. Pour in the soy milk and combine. The batter should be very thin.
Heat a non-stick crepe pan and lightly coat with a non-stick spray.
Pour in about 1/4 cup of the batter, tilting the pan so that the batter covers the bottom with a thin coating. Cook until it is browned from underneath and starts to pull away from the edge of the pan. Carefully flip it over.
